Provided by Food Network Kitchen

Time 2h10m

Yield 6 servings

Number Of Ingredients 14

3/4 cup turbinado sugar, plus more for sprinkling
1/2 cup light rum
1 tablespoon vanilla extract
1/2 teaspoon grated orange zest
Kosher salt
3 pounds Bing cherries, pitted and halved
3 tablespoons cornstarch
Cooking spray
6 tablespoons cold unsalted butter, cut into pieces
1 1/2 ounces semisweet chocolate, chopped (about 1/4 cup)
All-purpose flour, for dusting
1 1/2 14-ounce packages refrigerated piecrust dough (3 pieces)
Heavy cream, for brushing
Vanilla ice cream, for serving

Steps:

  • Whisk the sugar, rum, vanilla, orange zest and 1/4 teaspoon salt in a large bowl until the sugar dissolves. Add the cherries and cornstarch and toss; set aside until juicy, about 30 minutes. Line a baking sheet with foil and coat with cooking spray. Place six 5-to-6-inch ceramic tart dishes on the prepared pan. Add 3/4 cup cherries to each dish using a slotted spoon; top each with 1 tablespoon butter and 2 teaspoons chocolate. Transfer the remaining cherry mixture to a saucepan; add 1/2 cup water and simmer over medium heat, stirring occasionally, until thickened, 5 to 7 minutes. Divide among the dishes; cool completely.
  • Dust a surface with flour. Using a paring knife, cut out 6 circles from the piecrust, 1/2 inch bigger than the tart dishes (use the dishes as a guide). Place on another baking sheet; chill until ready to bake. Position a rack in the lower third of the oven and preheat to 375 degrees F. Top each dish with a piece of dough, pressing the edge against the dish to seal; pierce several times with a knife. Bake 45 minutes, then brush each pie with heavy cream and sprinkle with sugar. Continue baking until golden, about 15 more minutes. Serve with ice cream.

Tips:

  • To make a flaky pie crust, use a combination of butter and shortening. The butter will provide flavor, while the shortening will help to create a tender crust.
  • Use a food processor to quickly and easily make the pie crust. Just be sure not to overwork the dough, or it will become tough.
  • If you don't have a food processor, you can make the pie crust by hand. Just be sure to use a pastry blender to cut the butter and shortening into the flour until it resembles coarse crumbs.
  • If the pie crust is too dry, add a tablespoon of water at a time until it comes together. If the pie crust is too wet, add a tablespoon of flour at a time until it is no longer sticky.
  • Place the pie crust in the refrigerator for at least 30 minutes before rolling it out. This will help to prevent the crust from shrinking in the oven.
  • When rolling out the pie crust, use a light touch. Roll the dough from the center outward, and be careful not to overwork it.
  • If the pie crust tears, simply patch it up with a small piece of dough. No one will be able to tell!
  • To prevent the filling from bubbling over, brush the edge of the pie crust with egg white before baking.
  • Bake the pie in a preheated oven. This will help to ensure that the crust is cooked through evenly.
  • Let the pie cool for at least 15 minutes before serving. This will help to set the filling and prevent it from running out.

Conclusion:

With its rich chocolate filling, gooey cherry topping, and flaky pie crust, this Evil Chocolate Cherry Pie is sure to be a hit at your next party or gathering. The combination of chocolate and cherries is always a winner, and the addition of a streusel topping takes this pie over the top. So next time you're in the mood for a delicious and decadent dessert, give this recipe a try. You won't be disappointed!
