2 pounds chicken wings, separated into drumettes and flats
1 tablespoon baking powder
1/2 cup light brown sugar
2 tablespoons kosher salt
1 tablespoon butcher's grind cracked black pepper
2 tablespoons granulated sugar
1 tablespoon Hungarian paprika
1 tablespoon chili powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
Pinch of celery seeds

Steps:

  • For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.

1 cup your favorite barbecue sauce (or my Killer BBQ Sauce)
1 tablespoon finely chopped garlic
2 tablespoons sesame seeds
1 tablespoon sesame oil
1/4 teaspoon cayenne pepper, to taste

Steps:

  • Combine garlic, cayenne pepper, and barbecue sauce in a saucepan and bring to a quick boil.
  • Allow sauce to cool, then add the sesame oil and set aside.
  • With a sharp knife remove the tips from the chicken wings.
  • Place the wings in a large lock-top baggie and add the sauce mixture.

3 lbs chicken wings
1/2 cup butter (I used butter) or 1/2 cup margarine (I used butter)
1 cup soy sauce
1 cup brown sugar
3/4 cup water
1/4 teaspoon dry mustard

Steps:

  • Combine all ingredients except wings in a medium saucepan and heat until butter and sugar are melted. Cool, and pour over wings. Cover and marinate overnight, turning 2 or 3 times.
  • The next day: Bake at 375º F. for 1 1/4 to 1 1/2 hours.
