10 eggs, warmed for 5 minutes in hot water
1/4 cup water
2 heavy pinches salt
1/4 cup any combination chopped, fresh herbs (chives, parsley, tarragon, dill, or basil)
4 teaspoons room temperature butter, plus 2 teaspoons for finishing omelet
1 cup of any combination sauteed peppers and onions, grated cheese, sauteed mushrooms, cooked and drained spinach

Steps:

  • Add eggs, water, salt, and herbs to blender and combine on high for 5 to10 seconds.
  • Heat a 10-inch non-stick aluminum pan over medium-high heat. Once pan is hot add 1 teaspoon butter and brush around surface of pan. Using a 4 1/2-ounce ladle, place 1 ladle full of egg mixture into center of pan and stir vigorously with rubber spatula for 5 seconds. As soon as a semi-solid mass begins to form lift pan and move around until the excess liquid pours off into pan. Using your spatula move around the edge of the egg mixture to help shape into round and loosen edge. Let sit for 10 seconds without touching. Place 1/4 cup of filling onto 2/3 of surface of omelet.

  • Repeat process above for remaining 3 servings. Serve immediately.

Provided by Geoffrey Zakarian

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 10

1 teaspoon Dijon mustard
1/2 shallot, finely minced
2 tablespoons red wine vinegar
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
4 tablespoons minced fresh chives
3 tablespoons unsalted butter plus 4 tablespoons cold unsalted butter, cut into small cubes
8 large eggs, beaten
1 cup grated Gruyere
2 heads butter (Bibb) lettuce

Steps:

  • Combine the Dijon mustard, shallot and red wine vinegar in a large bowl. Season with salt and pepper. Slowly whisk in the olive oil and 3 tablespoons chives. Set aside.
  • Melt 2 tablespoons butter in a 12-inch nonstick pan over medium heat. When the butter starts to bubble, add the eggs and the cold cubed butter, and begin to stir with a rubber spatula. Continue to stir until the eggs are half set, then reduce the heat to low.
  • When the omelette is soft, sprinkle with salt and pepper, and top with the cheese on one side. Let the omelette sit over low heat, without touching it, for 1 minute, to let the heat of the pan set the eggs. Roll the omelette over the cheese so it forms a jelly roll shape, then roll the whole omelette onto a large dish. Lightly spread the remaining tablespoon butter over the omelette to coat. Toss the lettuce with the vinaigrette and serve alongside the omelette. Garnish the omelette with the remaining tablespoon chives.

FAMILY-SIZE TOMATO, BACON AND GARLIC OMELET

Family-Size Tomato, Bacon and Garlic Omelet image

From "The Best of America's Test Kitchen". Nice to have a recipe where everyone can eat at the same time. Posted for safe-keeping. I'm sure this could be adapted to include your favorite veggies or meats.

Provided by Treewoman

Categories     Breakfast

Time 35m

Yield 4 wedges, 4 serving(s)

Number Of Ingredients 8

8 large eggs
salt and pepper
8 slices bacon, minced
1 large tomatoes, cored, seeded, and chopped fine
1/2 green bell pepper, cored, seeded, and chopped fine
4 garlic cloves, minced
2 tablespoons unsalted butter
3 ounces shredded monterey jack pepper cheese or 3/4 cup monterey jack pepper cheese

Steps:

  • Whisk the eggs, 1/2 teaspoon salt, and 1/8 teaspoon pepper together in a large bowl. Set aside.
  • Fry the bacon in a 12-inch nonstick skillet over medium-high heat until crisp, about 8 minutes. Stir in the tomato and bell pepper and cook until the vegetables are softened, about 6 minutes.
  • Stir in the garlic and cook until fragrant, about 30 seconds. Transfer the mixture to a paper towel-lined plate and wipe the skillet clean with paper towels. Return the skillet to medium heat.
  • Melt the butter in the skillet, swirling to coat the skillet, until the foaming subsides. Add the eggs and bacon mixture to the pan and cook, stirring gently in a circular motion, until the mixture is slightly thickened, about 1 minute.
  • Use a rubber spatula to pull the cooked edges of the egg toward the center of the pan, tilting the pan so the uncooked egg runs to the cleared edge of the pan. Repeat until the bottom of the omelet is just set but the top is still runny, about 1 minute.
  • Cover the skillet, reduce the heat to low, and cook until the top of the omelet begins to set but is still moist, about 5 minutes.
  • Remove the pan from the heat. Sprinkle the cheese evenly over the omelet, cover, and let it sit until the cheese partially melts, about 1 minute. Slide half of the omelet onto a serving platter using a rubber spatula, then tilt the skillet so the remaining omelet flips over onto itself, forming a half-moon shape. Cut the omelet into wedges and serve immediately.

Tips:

  • Choose the right pan: Use a large, non-stick skillet or omelet pan with a heat-resistant handle. Avoid using cast iron or stainless steel pans, as they can cause the eggs to stick.
  • Heat the pan properly: Heat the pan over medium heat until it is hot enough to sizzle a drop of water.
  • Use enough butter or oil: Add enough butter or oil to coat the bottom of the pan. This will help prevent the eggs from sticking.
  • Don't overbeat the eggs: Beat the eggs just until they are combined. Overbeating will make the omelet tough.
  • Cook the omelet over medium heat: Cook the omelet over medium heat for 2-3 minutes, or until the bottom is set and the top is still slightly runny.
  • Don't flip the omelet too soon: Wait until the bottom of the omelet is set before you flip it. Flipping it too soon will cause the omelet to break.
  • Add your fillings: Once the omelet is flipped, add your desired fillings. Common fillings include cheese, ham, bacon, vegetables, and herbs.
  • Fold the omelet: Once the fillings are added, fold the omelet in half or into thirds. This will help to keep the fillings inside the omelet.
  • Serve immediately: Serve the omelet immediately with your favorite sides. Common sides include toast, fruit, and yogurt.

Conclusion:

With these tips in mind, you can make a delicious, family-sized omelet that everyone will enjoy. Omelets are a versatile dish that can be customized to your liking, so feel free to experiment with different ingredients and fillings. Whether you prefer a classic cheese omelet or something more adventurous, there is an omelet recipe out there for everyone.
