2 eggs
3-4 ounces 90-110 grams grams)crumbled feta
1 large onion finely chopped (I passed it through the food processor)
2 tablespoons chopped fresh parsley*
2 tablespoons chopped fresh mint
1 tablespoon chopped fresh dill
1 tablespoon dry oregano
1 teaspoon salt
1/2 cup bread crumbs
1/2 cup flour + more for coating
1/2 teaspoon baking powder
ground pepper
Olive oil for frying

Steps:

  • Grate the zucchini, place in a colander and lightly salt. Let it sit for 10 minutes. After 10 minutes have passed, squeeze (with your hands) as much water you can out of the zucchini.
  • In a large bowl mix the zucchini, feta , onion, parsley, mint, dill, oregano and 2 lightly beaten eggs.

3 tablespoons extra-virgin olive oil
1 zucchini, halved lengthwise and sliced into 1/4-inch half rounds (about 2 cups)
1 yellow squash, halved lengthwise and sliced into 1/4-inch half rounds (about 2 cups)
1 garlic clove, sliced
Kosher salt and freshly cracked black pepper
1 cup canned or jarred slow roasted tomatoes, drained
12 large eggs, beaten
6 ounces feta cheese, crumbled
1/2 cup dill, picked
1/2 cup parsley, chopped

Steps:

  • Preheat oven to 300 degrees F.
  • Heat the olive oil in a 10-inch nonstick cast-iron skillet over a medium high flame. When it is hot, add the zucchini and yellow squash. Season with salt and pepper. Saute until lightly caramelized, about 6 minutes.
  • When the zucchini and yellow squash are browned and softened, add the garlic and cook for 1 more minute. Add the tomatoes and toss to warm through. Add the eggs and begin to stir with a silicone or rubber spatula. When the eggs begin to show signs of setting, season with salt and pepper and place the skillet in the oven.

1 1/4 lbs zucchini, coarsely grated
salt and pepper
3 tbsp good quality butter
6 eggs
1 tbsp roasted garlic (could also use 1-2 crushed and minced garlic cloves)
2 tbsp chopped basil
1/4 cup freshly grated parmesean
1/4 cup pine nuts

Steps:

  • Toss the grated zucchini with 1 tsp salt and set aside in a colander for 20 minutes. Rinse briefly and squeeze dry. (This will get rid of excess water in zucchini which could make the frittata mushy) Warm 1/2 the butter in a skillet (I used 8 inch cast iron) over medium high heat. Add zucchini and cook until dry and flecked with gold in some places. (about 6 minutes). Transfer zucchini to a bowl and wipe out pan. Preheat broiler. Beat the eggs with a few pinches of salt and pepper, then stir in garlic, zucchini, basil and cheese. Add remaining butter to pan and when hot, add eggs. Lower heat to medium and cook for about 10 minutes or so, until top is almost dry (I pull back the sides a few times and let the raw egg ooze onto the pan while cooking). Put frittata in broiler to finish cooking the top. Sprinkle with pine nuts at the very end and lightly broil to golden brown. Remove from broiler and let rest for a few minutes. Loosen frittata with a spatula and it should slide right out onto a plate. Or you can just slice and serve from pan.

2 TBSP. extra virgin olive oil
6 large organic eggs, lightly beaten
1 cup ricotta, full fat (I like the Calabro brand)
¾ -1 cup fresh herbs, like parsley, dill, mint, basil, chopped
--- sea salt and freshly ground pepper
2 TBSP. butter

Steps:

  • Heat olive oil in a medium nonstick skillet. Add the onion and green onions and cook them gently until they are soft and lightly browned. Remove them from the pan and set them aside.
  • In a bowl, whisk the eggs and then add the ricotta. Whisk again until well incorporated with the eggs. Season the mixture generously with salt and pepper and add the fresh herbs and the reserved cooked onions.
  • Set the same pan over medium heat and add the butter. Once the butter melts, pour the egg mixture into the pan. When the mixture starts to set, with the help of a spatula, ease it away from the sides of the pan. Let the frittata cook gently until it is almost set. At this point it should be still a little wet on top.
  • Turn off the heat. Place a large plate on top of the pan. Invert the frittata upside down onto the plate and slide it back into the pan. The heat of the pan will only need 30 seconds or so to finish cooking the top of the frittata.

2 ½ teaspoons salt, divided
½ cup water, at room temperature
2 tablespoons flaxseed meal
½ cup shredded onion
½ cup shredded potato
½ cup fine dry bread crumbs
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh parsley
1 tablespoon lemon zest
½ teaspoon freshly ground black pepper
¼ teaspoon ground nutmeg
½ cup shredded carrot
½ cup all-purpose flour
1 teaspoon baking powder
½ cup olive oil

Steps:
