This is my own creation and I first made this in 1960, when I lived in Grand Rapids,Mi. Everyone loved it and asked for it often. The lemon juice gives this dish just the right amount of tart with the sweet. I have made it with apricots too! These are my own photos.

Tips:

  • Trim the beans: Remove the ends of the beans, where the stems were attached. You can also remove the strings from the beans, if desired.
  • Blanch the beans: Blanching the beans helps to preserve their color and crispness. To blanch the beans, bring a large pot of salted water to a boil. Add the beans and cook for 2-3 minutes, or until they are bright green and tender. Immediately transfer the beans to a bowl of ice water to stop the cooking process.
  • Shock the beans: After blanching, shock the beans in ice water to stop the cooking process and preserve their color. Drain the beans well and pat them dry.
  • Choose a cooking method: Green beans can be cooked in a variety of ways, including sautéing, roasting, steaming, and grilling. Choose a cooking method that best suits your taste and the other ingredients in your dish.
  • Season the beans: Green beans can be seasoned with a variety of herbs, spices, and sauces. Some popular seasonings for green beans include garlic, olive oil, salt, pepper, lemon juice, and Parmesan cheese.

Green beans are a versatile and delicious vegetable that can be enjoyed in many different ways. With their mild flavor and crisp texture, green beans are a great addition to salads, stir-fries, soups, and stews. They can also be roasted, grilled, or sautéed as a side dish.
