Back in 2009, Sam Sifton was invited to a potluck in which "guests were meant to bring food inspired by Ephron's career or by the woman herself." He drew meatloaf, a dish she was known for. Here, in this recipe adapted from Gourmet, he pairs beef, veal, pancetta and Parmesan. The end result, he described, as "luxurious." And what did Ms. Ephron think? She called it "remarkable."

1/2 loaf Italian bread, crust removed, torn into small pieces (about 2 cups)
1 cup whole milk
1 pound ground beef
1 pound ground veal
2 large eggs, scrambled
4 ounces thinly sliced pancetta, chopped
3/4 cup grated Parmesan
1 bunch parsley, cleaned and finely chopped (about 1 cup)
2 teaspoons grated lemon zest
Kosher salt
Freshly ground black pepper
1/4 cup extra-virgin olive oil
1/4 cup butter
1 cup dry white wine

Steps:

  • Heat oven to 375 degrees. Soak bread in milk for 10 minutes.
  • Mix beef, veal, eggs, pancetta, Parmesan, parsley and lemon zest in a large bowl. Season liberally with salt and pepper. Squeeze the bread to remove excess milk, then chop and add it to the meat. Mix gently until well combined, but do not overmix. Transfer onto a board and shape into a fine meatloaf, shy of a foot in length and 4 inches across. Loosely cover and refrigerate for 15 minutes.
  • Heat oil and butter in a large, ovenproof skillet over medium-high heat. Add meatloaf and sear without moving it until it is browned, about 5 minutes. Carefully slide a spatula under the meatloaf, then gently use another spatula to help turn it and brown the second side, again without moving it for 5 minutes. Transfer to a plate.
  • Pour out all but 2 tablespoons of the fat, return skillet to the stove and raise heat to high. Add wine and deglaze pan, scraping up browned bits stuck to it with a wooden spoon. Return meatloaf to the skillet and then transfer to the oven, basting occasionally with the pan juices, until a meat thermometer inserted into the center of the loaf reads 150 degrees, about 25 minutes.
  • Transfer the meatloaf to a platter and let stand, tented with foil, 10 minutes. Slice, pour the pan juices over the top and serve.

1 1/2 lbs ground sirloin (or 96% Fat-Free Healthy Choice ground beef)
1 small yellow onion, chopped
3 cloves garlic, minced
1 1/4 cups Italian seasoned breadcrumbs
2 tablespoons parsley flakes
1 tablespoon Italian herb seasoning
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup fat free egg substitute
1/4 cup dry red wine
1 cup fresh basil leaf, rinsed and packed into measuring cup
1/3 cup chopped sun-dried tomato, drained (packed in water)
4 ounces mozzarella cheese or 4 ounces sharp cheddar cheese, grated

Steps:

  • Preheat oven to 375.
  • In a large bowl, combine the first eight ingredients.
  • Blend in egg substitute and wine and mix thoroughly.
  • Spread out on a large sheet of parchment or wax paper.
  • Press the meatloaf mixture into a 7 1/2x10” rectangle on the sheet of paper.
  • Arrange the basil leaves over the surface and sprinkle chopped dried tomatoes over the top of the basil.
  • Then sprinkle with the cheese.
  • Using the paper to move things along, roll the meatloaf up like a jelly-roll.
  • As the meatloaf starts cracking, keep pressing it smooth again as you roll.
  • Roll the loaf as tightly as you can, peeling the paper away as you roll.
  • Place this beautiful loaf seam-side down in a 5x9” loaf pan that has been sprayed with Pam.
  • Cook at 350 for about 45 minutes to 1 hour or until cooked throughout and nice and crusty on top.
  • Serve hot or cold.

When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

1 cup fine fresh breadcrumbs (from 6 slices firm white bread; see Cooks' Note below)
1/3 cup whole milk
1 medium onion, coarsely chopped
1 celery stalk, coarsely chopped
4 garlic cloves
2 tablespoons neutral vegetable oil, such as grapeseed
2 1/4 teaspoons kosher salt, divided
1 1/2 teaspoons freshly ground black pepper, divided
3 tablespoons Worcestershire sauce
1 1/2 pounds ground beef chuck, preferably 20% fat
1/2 pound ground pork
2 large eggs
1/2 cup ketchup, divided, plus more for serving

Steps:

  • Position rack in center of oven; preheat to 350°F. Line a rimmed baking sheet or 13x9" shallow baking dish with foil. Soak breadcrumbs in milk in a large bowl until ready to use.
  • Pulse onion, celery, and garlic in a food processor until finely chopped. (Alternatively, you can finely chop by hand.)
  • Heat oil in a large skillet over medium. Add onion mixture, 1 tsp. salt, and 1/2 tsp. pepper. Cook, stirring occasionally, until softened, 5-7 minutes. Remove from heat, stir in Worcestershire, and scrape into bowl with breadcrumb mixture. Add beef, pork, eggs, 1/4 cup ketchup, and remaining 1 1/4 tsp. salt and 1 tsp. pepper, then mix with your hands to combine.
  • Form meatloaf mixture into a long, well-packed, approximately 5"-wide loaf shape on prepared baking sheet. Brush top of loaf with 1/4 cup ketchup. Bake meatloaf until an instant-read thermometer inserted into the center registers 155°F, 60-75 minutes. Let rest 15 minutes before slicing. Serve with more ketchup alongside.

Can you stand another meatloaf recipe? I saw this being made on a tv show -- but was vacuuming and didn't catch all the ingredients. So, I adapted my own (rather, my mother's) recipe and came up with this. My husband will not eat meatloaf any other way!

1 lb ground chuck
1/2 lb ground pork
1/2 lb ground turkey
1 envelope lipton's onion soup
1/2 cup very hot water
3/4 cup oatmeal
1 egg, beaten
4 tablespoons steak sauce (I use A1)
1 clove garlic, minced
1/4 teaspoon crushed thyme
1/2 teaspoon crushed basil
1 tablespoon flat leaf parsley, chopped (reserve 1 tsp for top of loaf)
1 bag of ready to eat baby spinach leaves
2 cups shredded mozzarella cheese

Steps:

  • Mix the meats, soup mix, water, oatmeal, egg, steak sauce and herbs together in a large bowl.
  • Pat meat mixutre into a rectangle.
  • The meat should be about 1/2 inch thick.
  • Lay the baby spinach leaves over the meat, overlapping them to form a solid layer.
  • Sprinkle all but 1/2 cup of cheese over the spinach.
  • Carefully roll the meat up.
  • This can be a little tricky, but once the first roll is made, it gets easier.
  • Once rolled, pinch the ends to seal and place on a cooking sheet.
  • Sprinkle remaining cheese and reserved parsley on top.
  • Bake at 350 for 45-55 minutes.
  • Let rest for five minutes before slicing.

½ cup dry bread crumbs
1 (1 ounce) package dry onion soup mix
¼ cup barbecue sauce
1 clove garlic, minced
1 egg

8 thin slices deli ham, or as needed
1 cup shredded Swiss cheese, or as needed
¼ cup ketchup
1 teaspoon mustard
1 tablespoon brown sugar
1 dash soy sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lay a 24-inch long sheet of parchment paper down on a work surface.
