Number Of Ingredients 9

Two 8.5-ounce boxes cornbread mix (I prefer Jiffy)
2 large eggs (or according to box instructions, remembering to double)
2/3 cup whole milk
1/2 cup chopped canned peaches in syrup, drained and syrup reserved
2 teaspoons chili-lime seasoning
2 jalapenos, finely chopped, seeds included (about 1/3 cup)
1 tablespoon salted butter, melted
1 tablespoon fresh lime juice
1 tablespoon salted butter

Steps:

  • For the batter: Add the cornbread mix to a large bowl. Whisk the eggs, milk, peaches, chili-lime seasoning and jalapenos in a medium bowl. Fold the egg mixture into the cornbread mix. Let rest 5 minutes.
  • Preheat oven to 400 degrees F. Brush 8 mini loaf pans with the melted butter. Pour a scant 1/2 cup of the batter into each of the loaf pans and spread evenly (each should be about three-quarters of the way full). Bake until the tops are golden, about 20 minutes.
  • For the glaze: Add 1/4 cup of the reserved peach syrup to a small pot, then add the lime juice and butter. Stir together and heat until everything begins to simmer. Remove the cornbread from the oven and immediately pour the glaze over the top of the loaves. Allow it to soak in. Serve warm.

DH loves this with Recipe #272121 and fried potatoes. UPDATE!!! YES! I did omit 4 teaspoons of baking powder in the recipe! Mea Culpa! It should be sifted along with the dry ingredients. 1 cup all-purpose flour
1 cup yellow cornmeal
1/3 cup sugar
4 teaspoons baking powder
3/4 teaspoon table salt (table salt, not kosher)
2 large eggs
1 cup whole milk
1/4 cup oil (please do not use canola oil or you will get a heavy, greasy result)
1 tablespoon shortening (I use Crisco)

Steps:

  • Preheat the oven to 425 degrees F. Once the oven is hot start the recipe since you want a screaming hot oven.
  • Grease the bottom and sides of the cast iron skillet with the shortening. Use more than 1 tablespoon if you need to get more coverage.
  • By hand, sift all the dry ingredients together and stir them to make sure they are combined and make a well in the center.
  • Combine the eggs, milk and oil and mix well.
  • Pour the wet ingredients into the dry and stir only until they combine. I fold them together with a spatula.
  • Let batter rest for 5 minutes.
  • Gently pour into your cast iron skillet being careful not to deflate the batter.
  • Bake in the center of the oven for 20 to 25 minutes.

  • Heat oven to 400°F. Generously grease bottom and side of 10-inch cast-iron skillet with shortening or spray with cooking spray. Heat greased skillet in oven about 5 minutes or until hot.

This recipe is out of my great-grandmother Bertha Iva Steinbeck's recipe box. She really was John Steinbeck's aunt. She lived in Hollister, California, and died in the '30s. I've been making this since I was about 5 years old when my grandmother, Agnes Steinbeck Bowman decided I was old enough to learn to cook. It was actually the second thing I learned to cook...she wanted to see how I handled scrambled eggs before she introduced me to something that demanded some technique! I've never tasted better cornbread in my 47 years.

½ cup white cornmeal
¼ cup white sugar
4 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup buttermilk
¼ cup corn oil

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease an 8 inch glass baking dish.
  • Sift the flour, cornmeal, sugar, baking powder, baking soda and salt into a large bowl. In a separate bowl, whisk together the buttermilk, corn oil and egg.
