Freshly ground black pepper to taste
8 large eggs
1 cup extra-sharp farmhouse cheddar, shredded (about 4 ounces)

  • Push the potatoes aside to make 4 evenly spaced shallow nests and break 2 eggs into each. Bake until the egg whites are cooked and the yolks are still runny, about 10 minutes. Sprinkle the cheese over the eggs and continue baking until it just melts, about 1 minute more. Serve immediately.

  • To ensure even cooking, use a baking dish that is just large enough to hold the potatoes and eggs in a single layer.
  • If you don't have a baking dish, you can also use a large skillet. Just be sure to reduce the cooking time so that the potatoes don't burn.
  • If you like your eggs runny, cook them for less time. If you prefer them more well-done, cook them for a few minutes longer.
  • Feel free to add other vegetables to this dish, such as chopped bell peppers, onions, or spinach.
  • Use a variety of cheeses to add different flavors to this dish. Some good options include cheddar, mozzarella, and Parmesan.
  • Serve this dish with a side of toast or biscuits for a complete meal.
