Number Of Ingredients 8

2 (10 3/4 ounce) cans condensed cream of celery soup
2 cups diced cooked ham
1 (10 ounce) package frozen corn, thawed
1 large baking potato, cut into 1/2 inch pieces
1 medium red bell pepper, diced
1/2 teaspoon dried thyme

1/2 cup milk

Steps:

  • Combine soup, ham, corn, potato, bell pepper and thyme in slow-cooker; mix well.
  • Cover; cook on LOW 6-8 Hours or on HIGH 3-4 hours.

  • Note: I added the milk early and bumped up the amount of milk to 1 Cup.

Tips:

  • For the best flavor, use high-quality ham. Look for ham that is smoked or cured, and that has a good amount of marbling.
  • If you don't have any leftover ham, you can use deli ham or canned ham. Just be sure to chop it into small pieces before adding it to the soup.
  • You can use any type of potatoes you like in this soup. Russet potatoes, Yukon Gold potatoes, and red potatoes are all good choices.
  • To make the soup thicker, mash some of the potatoes before adding them to the soup. You can also add a cornstarch slurry or a roux.
  • Season the soup to taste with salt and pepper. You may also want to add other seasonings, such as garlic powder, onion powder, or paprika.
  • Serve the soup hot, garnished with fresh parsley or chives.
