3/4 cup cake flour
1 teaspoon baking powder
1/2 teaspoon salt
5 large eggs, separated
1/2 cup granulated sugar
1 teaspoon vanilla extract, plus 1/4 teaspoon
2 tablespoons confectioners' sugar, plus 1/4 cup
2 cups heavy cream
1 1/2 cups strawberry jam
Fresh mint sprigs, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Spray a rimmed 10-by-15-inch baking sheet with cooking spray, then line with parchment paper; spray the parchment paper.
  • In a medium bowl, whisk to combine the cake flour, baking powder and 1/4 teaspoon of the salt. Set aside.

1 (18 ounce) box white cake mix
3 egg whites (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1 (12 -16 ounce) container white frosting
1 1/2 pints fresh strawberries
1 (12 ounce) package strawberry glaze

Steps:

  • Preheat oven to 350F and lightly grease/flour cake pans.
  • Mix and bake cake mix according to directions on box.
  • Use 2 - 8" or 9" round cake pans.
  • Wash strawberries immediately before using and slice very thin.
  • On bottom cake, spread a layer of strawberry glaze over the top portion of the cake--not the sides.
