Categories     Food & Cooking     Soups, Stews & Stocks     Soup Recipes

Time 1h15m

Number Of Ingredients 8

1 tablespoon vegetable oil
2 pounds chicken parts, such as necks and backs
1 whole chicken (3 1/2 to 4 pounds), rinsed
4 medium carrots, cut into pieces
3 celery stalks, cut into pieces
1 large yellow onion, quartered
2 teaspoons black peppercorns
5 stems parsley

  • In a 10- or 12-quart stockpot, heat oil over high. Add chicken parts and cook, turning frequently, until browned on all sides, 15 minutes.
  • Pour out fat. Add whole chicken, carrots, celery, onion, peppercorns, parsley, and enough cold water to cover ingredients by 1/2 inch (about 12 cups).
  • Bring to a boil over high. Reduce heat and simmer until chicken is cooked through, 40 minutes, skimming fat and foam and flipping chicken once.
  • Transfer whole chicken to rimmed baking sheet and let cool, about 10 minutes.
  • Pour liquid through a paper-towel-lined sieve into a large bowl (you should have 10 cups broth). Discard vegetables and chicken parts.

Tips:

  • Use a variety of vegetables: The more vegetables you use, the more flavorful your broth will be. Some good options include carrots, celery, onions, leeks, garlic, parsnips, turnips, and mushrooms.
  • Roast your vegetables before adding them to the broth: Roasting vegetables brings out their natural sweetness and flavor. To roast vegetables, simply toss them with olive oil and salt and pepper, and then roast them in a preheated oven at 425°F for 20-30 minutes, or until they are tender and browned.
  • Use a good quality chicken: The better the quality of chicken you use, the better your broth will be. Look for chicken that is free-range and organic, if possible.
  • Simmer the broth for at least 1 hour: The longer you simmer the broth, the more flavor it will have. Simmer the broth for at least 1 hour, or up to 3 hours, for a richer flavor.
  • Season the broth to taste: Once the broth is finished simmering, season it to taste with salt, pepper, and other herbs and spices. Some good options include thyme, rosemary, sage, bay leaves, and parsley.

Conclusion:

Making chicken soup base from scratch is a great way to add flavor to your soups, stews, and other dishes. By following these tips, you can make a delicious and flavorful chicken soup base that will be sure to impress your family and friends.
