8 potatoes, peeled and diced
¼ cup butter
1 onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
¼ cup sour cream
¾ cup shredded Cheddar cheese
salt to taste
ground black pepper to taste
¼ cup shredded Cheddar cheese

Steps:

  • Bring a large pot of salted water to a boil and add potatoes. Cook until tender, then drain water. While potatoes are cooking, heat a small skillet over medium heat. Melt butter and saute onion until golden brown. Set aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Mash potatoes with cream of chicken soup and sour cream until smooth and creamy. Mix in onions, 3/4 cup cheese, salt, and pepper. 8 large eggs
2 tablespoons chicken broth
salt and pepper
1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
1 1/2 cups bacon pieces, cooked diced drained
3 cups grated sharp cheddar cheese
1 cup diced sun-dried tomato
salt and pepper

Steps:

  • Mix eggs, broth, , salt and pepper together.
  • Put potatoes and onion, evenly over bottom of a greased casserole.
  • Layer bacon and sun dried tomatoes. Pour beaten egg mixture over potatoes.
  • Spread cheese over top. Cover with foil and bake at 350° F for 30 minutes.
  • Remove foil and bake an additional 15 minutes until golden brown.

2 (16 ounce) bags frozen southern style hash brown potatoes
2 (10 3/4 ounce) cans cream of mushroom soup (or your choice)
1/2 cup milk
1 (24 ounce) container French onion dip
1/4 cup butter (cut into pieces) or 1/4 cup margarine (cut into pieces)
salt and pepper
2 (16 ounce) packages shredded cheddar cheese

Steps:

  • In large bowl, place potatoes. Thaw in microwave on defrost. Add cream soup, milk and chip dip and 3/4 of shredded cheese. Place potato mixture into 9x13 baking pan. (may need to use additional small casserole dish in addition to 9x13 pan. Season with salt and pepper and dot with butter pieces. Cover with foil. Bake at 375F for about 30 minutes till bubbly. Remove foil and top with remaining shredded cheese. Return to oven and bake till cheese is bubbly and browned (about 20 minutes). Remove from oven and allow to set at room temperature about 10-15 minutes.
  • Cook's Note: Can freeze leftovers.
