Fat Free Banana Bread (Vegan) image

Found this recipe on VegFamily. This banana bread is so moist. Be very careful to not over mix....over mixing will result in a dry bread.

Time 1h15m

Yield 1 loaf

Number Of Ingredients 8

5 ripe bananas
1 cup vegan sugar (Florida Crystals)
1 teaspoon vanilla
2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 cup water

Steps:

  • In a large bowl mash bananas with sugar and vanilla until combined and creamy. Then mix in the water. (I just put these ingredients in my VitaMix Blender and it's much easier).
  • In a smaller bowl, sift together the flour, baking soda, baking powder and cinnamon.
  • Add the dry to wet and stir until just mixed . You don't want to over mix or the bread will be dry. (So important to stir just until mixed.).
  • Pour batter into sprayed loaf pan and bake in preheated 350 degree F oven for one hour. Your house will smell so good you will be temped to take it out a few minutes earlier but don't or it won't be done on the inside.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your bread will be. You can even use bananas that have started to turn brown.
  • Use a food processor or blender: This will help you achieve a smooth batter. However, you can also mash the bananas by hand if you don't have a food processor or blender.
  • Don't overmix the batter: Overmixing can result in a tough, dense bread. Mix the batter just until the ingredients are combined.
  • Bake the bread at the right temperature: The ideal temperature for baking banana bread is 350 degrees Fahrenheit. If you bake it at a higher temperature, the bread may burn.
  • Let the bread cool completely before slicing: This will help prevent the bread from crumbling.

Conclusion:

This fat-free, vegan banana bread is a delicious and healthy treat that is perfect for breakfast, lunch, or a snack. It is easy to make and can be enjoyed by people of all ages. With its simple ingredients and straightforward instructions, this recipe is sure to become a favorite in your home.
