This is a low cal modification of my mom's cornbread recipe. Using Splenda instead of sugar and "I Can't Believe It's Not Butter Lite" instead of butter or oil, makes a big difference in calories but not in taste. I just made some to serve with chili and it was great!

1 cup flour
1 cup cornmeal
1 teaspoon salt
4 teaspoons baking powder
1/3 cup Splenda sugar substitute, for baking,not packets
1 egg
1 1/4 cups nonfat milk
1/4 cup melted i can't believe it not butter light margarine

Steps:

  • Combine ingredients in a large bowl, then mix by hand until batter is just moistened.
  • Pour into 9 large muffin cups or a 9x9 cake pan sprayed with Pam.
  • Bake for 25-30 minutes at 350 degrees F.

This is my own variation of a great healthy recipe published by Dr. Dean Ornish. I love this with bean soups. The 7x9 pan fits perfectly in the toaster oven. A jar of applesauce goes bad quickly in my home, so I started buying the 6 packed individuals.

1 cup whole grain yellow cornmeal
2 teaspoons baking powder
1 cup vanilla soymilk
1/2 cup unsweetened applesauce
2 egg whites

Steps:

  • Preheat oven to 425 degrees.
  • Spray a 7 x 9 nonstick pan lightly with nonstick spray.
  • In a medium bowl, stir flour, cornmeal and baking powder together.
  • In a large bowl, whisk together milk, applesauce and egg whites.
  • Preheat the pan 1 minute, not to burn the spray.
  • Lightly stir all ingredients to a lumpy blend in the large bowl and pour into preheated pan.

I came across this one in a Weight Watchers cookbook, though this recipe was listed in order for you to make it to use in cornbread stuffing. Therefore I was worried that it would not be good to eat on its own. But it was tasty! And it does not have the funny consistency that some fat free baked goods do. It makes 12 servings and each serving is only 2 WW points!

1 1/4 cups skim milk
