LOW FAT, SUGAR FREE CORNBREAD
This is a low cal modification of my mom's cornbread recipe. Using Splenda instead of sugar and "I Can't Believe It's Not Butter Lite" instead of butter or oil, makes a big difference in calories but not in taste. I just made some to serve with chili and it was great!

FAT FREE CORNBREAD
This is my own variation of a great healthy recipe published by Dr. Dean Ornish. I love this with bean soups. The 7x9 pan fits perfectly in the toaster oven. A jar of applesauce goes bad quickly in my home, so I started buying the 6 packed individuals.

EASY ALMOST FAT FREE CORNBREAD
I wanted cornbread for dinner and was having a hard time finding a good low fat recipe. Many included corn kernels and my family won't eat that in cornbread! I came across this one in a Weight Watchers cookbook, though this recipe was listed in order for you to make it to use in cornbread stuffing. Therefore I was worried that it would not be good to eat on its own. But it was tasty! And it does not have the funny consistency that some fat free baked goods do. It makes 12 servings and each serving is only 2 WW points!

MOOSEWOOD RESTAURANT ALMOST FAT-FREE CORNBREAD
We are trying to cook healthier this year. This cornbread uses cooked pumpkin, squash or sweet potato puree. A 4 oz. or 41/2 oz. jar of baby food (check to make sure it is just puree) works well in this recipe. This gives the cornbread a deep golden color.

Tips:
- Choose the right type of cornmeal: Use a coarse or medium-grind cornmeal for a more rustic texture, or a fine-grind cornmeal for a smoother texture.
- Don't overmix the batter: Overmixing will result in a tough, dense cornbread. Mix just until the ingredients are combined.
- Let the batter rest: Allowing the batter to rest for a few minutes before baking will help it develop a better flavor and texture.
- Bake the cornbread in a hot oven: A hot oven will help the cornbread to rise and develop a crispy crust.
- Use a cast iron skillet: A cast iron skillet will help the cornbread to cook evenly and develop a nice crust.
- Add your favorite mix-ins: You can add a variety of mix-ins to your cornbread, such as cheese, bacon, jalapenos, or corn kernels.
Conclusion:
Fat-free cornbread is a delicious and healthy alternative to traditional cornbread. It is easy to make and can be enjoyed by people of all ages. With its light and fluffy texture, fat-free cornbread is a perfect side dish for any meal.
