Categories     Yeast Breads

Time 1h15m

Yield 2 Loaves, 6 serving(s)

Number Of Ingredients 10

5 1/2-6 cups all-purpose flour
1 tablespoon sugar
2 teaspoons salt
5 teaspoons active dry yeast (2 packages )
1 tablespoon butter or 1 tablespoon margarine, softened
1 3/4 cups very warm water (120 -130 F)
cornmeal
peanut oil or light olive oil
1 egg white
1 tablespoon cold water

Steps:

  • In large bowl thoroughly mix 1 1/2 cups flour, sugar, salt and undissolved yeast.
  • Add butter.
  • Gradually add warm water to dry ingredients and beat 2 minutes with mixer at medium speed, scraping bowl occasionally.
  • Add 3/4 cup flour.
  • Beat at high speed for 2 minutes, scraping bowl occasionally.
  • Stir in enough additional flour to make a stiff dough.
  • Turn dough onto a lightly floured board and knead until smooth and elastic (about 8-10 minutes).
  • Cover dough with plastic wrap and then a towel and let it rest for 20 minutes.
  • To make loaves: Divide dough in half.
  • Roll each half into a 15x10 inch rectangle.
  • Starting at wide side, roll up tightly; pinch seam to seal.
  • Taper ends by rolling gently back and forth.
  • To make rolls: Divide dough into 6 equal pieces.
  • Roll each piece into a rectangle 8x5 inches.
  • Starting with wide side, roll up tightly; pinch seam to seal.
  • Taper ends.
  • Place the shaped dough seam side down on greased baking sheets sprinkled with cornmeal.
  • Brush dough with oil.
  • Cover loosely with plastic wrap and refrigerate 2-24 hours.
  • When ready to bake, remove from refrigerator and uncover carefully.
  • Let dough stand at room temperature for 10 minutes.
  • Make 3 or 4 diagonal slits in dough with a sharp knife or razor blade.
  • Bake at 425°F for 15 minutes for rolls, 20 minutes for loaves.
  • Remove from oven and brush with egg white beaten with cold water.
  • Return to oven; bake 5-10 minutes longer, or until golden.
  • **Note: I sometimes add 1/2 to 1 teaspoon (adjust amounts to your preferences) of dried oregano OR basil OR rosemary to the dry ingredients.
  • Sometimes I also add 1 bulb (head) of roasted garlic cloves to the dry ingredients.
  • To roast garlic: Peel as much of the outer skin away as possible, leaving the cloves unpeeled and the head intact (optional: trim the tips of the cloves off to expose the"meat" to the oil).
  • Place head (s) in covered casserole or on a piece of heavy aluminum foil.
  • Drizzle with olive oil, and bake covered at 350 degrees for about 45 minutes (mine takes over an hour in a terra-cotta garlic baker), or until cloves are soft and can be squeezed easily out of their skins.
  • Let roasted garlic cool before adding to the flour for the bread.

Steps:

  • EQUIPMENT: You will need a medium sized mixing bowl, thermometer, blender, and an electric mixer.

  • SECOND RISING: After the dough has risen, uncover and punch it down to remove the air bubbles, add as little flour as necessary. Turn the dough into the greased casserole dish, and cover and let rise until doubled in size about 45 minutes, then uncover and place in the pre-heated oven (350 degrees) and bake for 35 to 45 minutes. It sounds hollow inside when tapped lightly. Remove the bread from the casserole dish, and butter the top, and place on a wire rack to cool before slicing. Enjoy!

BONNIE'S DILL AND ONION CASSEROLE BREAD

BONNIE'S DILL AND ONION CASSEROLE BREAD image

The texture of this outstanding bread is surpisingly light on the inside with a nicely browned, chewy crust on the outside. I fell in love with the taste, the texture and the method of baking it in a casserole dish. The smell will kill you with joy! My husband loved it and hovered in the kitchen, waiting for it to come out of the oven. He got the knife out of the drawer, and cut a big chunk for himself. I made him wait while I took the picture. He wants to know if I will make this again. What do you think? Enjoy! The photo is my own. 1960 recipe by Leona Schnuelle

DILL ONION BUTTERMILK BREAD

Dill Onion Buttermilk Bread image

This is the first bread recipe I ever made. It's also my favorite. Prep time includes time for dough to rise.

Provided by Shelby Jo

Categories     Yeast Breads

Time 2h30m

Yield 3 medium loaves

Number Of Ingredients 11

2 tablespoons yeast
1 teaspoon sugar
1/3 cup water, lukewarm
7 -7 1/2 cups unbleached flour
2 teaspoons salt
2 teaspoons dill weed
1 onion, chopped (medium)
3 -4 tablespoons butter, melted
1 egg, beaten
1 cup buttermilk
1 cup water (have more on hand)

Steps:

  • Make mound of flour directly on counter or table. Make a well in the center for the yeast. Add the other dry ingredients (onion, dill weed, and salt) around the edge. Make sure to keep salt out of the yeast.
  • Add sugar and the lukewarm water to the yeast. Proof yeast until bubbly.
  • Mix together the melted butter, egg, buttermilk, and 1 cup of water. SLOWLY add to dry ingredients while mixing with the other hand.
  • Mix together until it forms a ball that is not sticky or dry. It should be soft "like a baby's bottom".
  • Put in a greased bowl and cover with a light damp towel. Let dough rise until doubled (about 45 minutes or so).
  • Punch dough down and separate into 3 medium loaves. Place loaves in greased pans and let rise again for another 45 minutes.
  • Bake at 350°F for 30 minutes. (I usually check it a little early!).

Tips:

  • Choose the right onions: White onions are the best choice for this recipe because they have a mild flavor that won't overpower the other ingredients.
  • Slice the onions thinly: This will help them cook evenly and quickly.
  • Use fresh dill: Fresh dill has a much more flavorful taste than dried dill.
  • Don't overmix the dough: Overmixing the dough will make the bread tough.
  • Let the dough rise in a warm place: This will help it rise quickly and evenly.
  • Bake the bread until it is golden brown: This will ensure that it is cooked through.

Conclusion:

This feather-light white onion dill bread is a delicious and versatile bread that can be used for a variety of purposes. It is perfect for sandwiches, toast, or even just as a snack. The combination of white onions and dill gives this bread a unique and flavorful taste that is sure to please everyone.
