3 tablespoons freshly squeezed orange juice
2 teaspoons ground chipotle powder
4 tablespoons minced fresh rosemary leaves, divided

Steps:

  • Preheat the oven to 350 degrees. Brush a sheet pan generously with vegetable oil. 2 teaspoons dried chipotle powder
2 teaspoons salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
3/4 cup sugar
1/4 cup honey
1 egg white
6 cups nuts (almonds, pecans, hazelnuts, walnuts, cashews, peanuts)

Steps:

  • Beat egg white until stiff peaks.
  • Drizzle honey into the egg whites while still mixing.

1/4 cup tomato paste
3 tablespoons honey

Here's my take on sweet and spicy nuts, or as I like to call them, Sassy Nuts. Berbere seasoning is an Ethiopian spice mix available at African markets or on the Internet. I highly recommend it if you are a fan of full flavored hot spice blends. I put these nuts into festive gift bags for my children's teachers at Christmas time. Enjoy!

6 cups pecan halves or 6 cups nuts, of your choice
1 large egg white
1 teaspoon water
1 teaspoon salt
1/2 cup light brown sugar, packed
1 teaspoon cinnamon
1 teaspoon berbere (Or substitute 1/2 teaspoon cayenne, 1/4 teaspoon nutmeg and 1/4 teaspoon allspice)

Steps:

  • Preheat oven to 350 deg F.
  • Pour the 6 cups of nuts into a gallon size zipper top plastic bag. In a small bowl, beat the large egg white with the teaspoon of water until the white is frothy.
