FENNEL SPINACH SAUTE

Fennel Spinach Saute image

Spinach and fennel are two of my favorite veggies, so I'm always looking for new ways to use them. This is an amazing side dish, but if you slice the fennel a bit smaller, it also makes a great stuffing for chicken breasts or beef tenderloin. -Noelle Myers, Grand Forks, North Dakota

MADHUR'S SPINACH WITH GINGER, FENNEL, AND BLACK CUMIN

Madhur's Spinach with Ginger, Fennel, and Black Cumin image

To intensify the simple seasonings, Martha's friend Madhur Jaffrey first fries the fennel and cumin seeds in oil -- a method known as "tarka," which coaxes more flavor out of the spices by heating them. The spicy spinach is delicious with chicken, lamb, beef, or rice.

Yield Makes 8 servings

Number Of Ingredients 5

6 tablespoons (3/4 stick) unsalted pareve margarine
6 cups chopped fresh fennel bulbs
4 cups chopped leeks (white and pale green parts only)
6 cups chicken broth
2/3 cup (packed) fresh spinach leaves

Steps:

  • Melt margarine in large pot over medium heat. Add fennel and leeks. Sauté until just translucent, about 15 minutes. Add broth to cover pot. Simmer until vegetables are tender, about 20 minutes.
  • Puree soup in small batches in blender until smooth, adding spinach to last batch before pureeing. Return soup to same pot.Season with salt and pepper. (Can be prepared 1 day ahead. Refrigerate until cold, then cover and keep refrigerated.)
  • Rewarm soup over low heat, stirring occasionally. Ladle into bowls and serve.

Tips:

  • Choose fresh fennel and spinach: The fresher the produce, the better the flavor of your sauté will be.
  • Use a large skillet: This will give the vegetables plenty of room to cook evenly.
  • Don't overcrowd the skillet: If you add too many vegetables at once, they will steam instead of sautéing.
  • Cook the vegetables over medium heat: This will help them to cook evenly without burning.
  • Season the vegetables with salt and pepper: This will help to enhance their flavor.
  • Add other ingredients to taste: You can add other vegetables, such as onions, garlic, or mushrooms, to your sauté. You can also add herbs, such as basil or oregano, or spices, such as cumin or chili powder.
  • Serve the sauté immediately: This is when it will be at its best flavor.

Conclusion:

Fennel and spinach sauté is a delicious and healthy side dish that can be served with a variety of main courses. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a quick and easy side dish, give this fennel and spinach sauté a try!
