Steps:
- Scorch the red peppers directly over the largest flame on the hob for around 5 mins until they blacken, rotating frequently. If you don't have a gas hob, you can use a barbecue or an oven grill on the highest setting. Once blackened, put in a container with a lid and leave to cool.
- Peel the skin off and remove the seeds and any pith from inside. Slice thickly, reserving any juices. Sieve the juices to remove any seeds.
- Cut the broccoli into large florets. Heat the oil in a frying pan over a medium-high heat and fry the broccoli for 5 mins, stirring regularly, until starting to to turn golden brown. Add the onion, garlic, some seasoning and 100ml water, then put the lid on the pan. Reduce the heat to medium and cook for a further 5 mins, stirring regularly.
- Pour in any remaining pepper juices, mix and spoon onto a serving plate. Place the red pepper slices on top and scatter over the feta.

Steps:
- Char peppers directly over gas flame or in broiler until blackened on all sides. Enclose peppers in paper bag 10 minutes. Peel and seed peppers, then cut into 1/3-inch-wide strips. (Can be prepared 1 day ahead. Cover and refrigerate.)
- Working in batches, cook broccoli and broccoli rabe in large pot of boiling salted water until just crisp-tender, about 3 minutes per batch. Using large slotted spoon or strainer, transfer vegetables to bowl of ice water to cool. Drain well. (Can be prepared 1 day ahead. Wrap in paper towels; enclose in resealable plastic bags and refrigerate.)
- Heat olive oil in heavy large pot over medium-high heat. Add garlic; stir until golden, about 1 minute. Add broccoli and broccoli rabe; toss until coated with oil and heated through, about 5 minutes. Add bell pepper strips; toss to blend. Season with salt and pepper. Transfer to platter. Serve warm or at room temperature.
Tips:
- Choose the freshest broccoli you can find. Look for broccoli with tightly closed florets and a deep green color. Avoid broccoli that is yellowed or has brown spots.
- Trim the broccoli florets into even-sized pieces. This will help them cook evenly. You can also use a vegetable peeler to remove the tough outer layer of the broccoli stalks.
- Blanch the broccoli florets in boiling water for 2-3 minutes. This will help to brighten their color and preserve their nutrients.
- Sauté the red peppers in butter until they are softened. This will add a delicious flavor to the dish.
- Add the broccoli florets and garlic to the red peppers. Cook until the broccoli is tender, about 5-7 minutes.
- Season the dish with salt, pepper, and red pepper flakes. You can also add other herbs and spices to taste.
- Serve the roasted broccoli with a sprinkle of Parmesan cheese.
Conclusion:
This roasted broccoli with buttered red peppers is a delicious and healthy side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a healthy and flavorful side dish, give this recipe a try. You won't be disappointed!
