2 packages (8 ounces each) cream cheese, softened
1/2 cup crumbled feta cheese
2 teaspoons ranch salad dressing mix
1/4 cup shredded Parmesan cheese
1/4 cup crumbled cooked bacon
1/2 teaspoon dill weed
Assorted crackers

Steps:

  • In a large bowl, beat cream cheese until fluffy. Add feta cheese and dressing mix; mix well. Shape into a ball. , In a small bowl, combine the Parmesan cheese, bacon and dill weed; roll cheese ball in Parmesan mixture. Wrap tightly in plastic wrap. Refrigerate for at least 1 hour or until firm. Serve with crackers.

½ cup butter, room temperature
1 (5 ounce) jar pimento-stuffed green olives, drained and minced
1 ½ teaspoons garlic powder
1 cup chopped walnuts

Steps:

  • In a medium bowl, stir together the cream cheese and margarine until well blended. Mix in the green olives and garlic powder. Shape into a ball, and roll in chopped walnuts to coat. 2 cups crumbled blue cheese
2 cups shredded cheddar cheese
1/2 cup chopped green onions
1 garlic clove, minced
TOPPINGS:
1/4 cup cooked tiny shrimp
2 tablespoons chopped pimiento-stuffed olives
2 tablespoons crumbled cooked bacon

  • In a large bowl, combine two packages of cream cheese and blue cheese until smooth. In a another large bowl, combine two packages of cream cheese and cheddar cheese; set aside. In a third bowl, beat the remaining cream cheese until fluffy; add the onions and garlic., In a 2-qt. bowl lined with plastic wrap, layer each portion of cream cheese. Invert onto a serving platter; remove plastic wrap and shape into a ball. , With a sharp knife, score eight sections on the ball. Sprinkle each section with one of the toppings and press lightly. Cheese is a wonderful and versatile party food. This cheese ball is loosely based on a recipe my mother always made to take to Christmas parties. It's quite different from her actual dish, but equally tasty and very easy to bring together. Time includes the first refrigeration.

4 ounces neufchatel cheese, softened and cubed
4 ounces sharp cheddar cheese, grated
2 ounces blue cheese, softened and cubed
1/4 cup mayonnaise, preferably whole egg and unsweetened
1/4 teaspoon ground cumin
1/8 teaspoon chile powder
1 tablespoon white wine vinegar
1 tablespoon Worcestershire sauce
2 tablespoons stuffed green olives, finely chopped
2 tablespoons onions, finely chopped
1 tablespoon sweet pickle relish
1/2 cup sunflower seeds, toasted
1/2 cup flat leaf parsley, finely chopped

Steps:

  • Put the three cheeses in a food processor, and buzz until blended.
  • Add the remaining ingredients -- except for the sunflower seeds and parsley -- and buzz to blend well.
  • Put the cheese mixture in the fridge for two hours so it firms up.
  • While cheese mixture chills, toast sunflower seeds until they are golden, then remove from pan and allow them to cool. Then stir together seeds and parsley. Set aside.
  • Remove cheese mixture from fridge and shape into a ball or log (you may need to wear latex gloves to do this).
  • Spread sunflower seeds and parsley on a sheet of waxed paper, and roll cheese ball/log in this combination.
  • Serve with crackers, crudités and or small toasts.

This was my mom's famous cheese ball, everyone always gives it compliments and asks for the recipie.

1 lb cheddar cheese, shredded
3 ounces cream cheese
3 tablespoons mayonnaise
1/2 teaspoon Worcestershire sauce
1 dash onion salt
1 dash garlic salt
1 dash celery salt
1/4 cup green olives, chopped
3 tablespoons minced dried beef
3 tablespoons fresh parsley

Steps:

  • Combine, cheeses, mayonnaise, worcestershire sauce, and salts. Blend until smooth. If too stiff add a bit more mayonaise. Add olives and shape into ball. Combine dried beef and fresh parsley and roll ball in the mixture. Cover with plastic wrap and chill. For a difference you can roll in crushed walnuts or pecans.
  • Serve with crackers.
  • Note - this is best with freshly grated cheese - not the package of pre-shredded stuff, the moisture content is needed.
