Tips for Making Festive Pineapple Cranberry Salad:

  • Use fresh ingredients: For the best flavor, use fresh pineapple and cranberries. If you can't find fresh pineapple, you can use canned pineapple, but be sure to drain it well before using.
  • Don't overcook the cranberries: Cranberries should be cooked just until they are softened and have burst. Overcooking will make them tough and tart.
  • Use a light hand with the sugar: Pineapple and cranberries are both sweet fruits, so you don't need to add a lot of sugar to the salad. Start with a small amount and add more to taste, if desired.
  • Chill the salad before serving: This will allow the flavors to meld and the salad to firm up. You can chill the salad for at least 30 minutes, or up to overnight.
  • Garnish the salad with fresh mint or parsley: This will add a pop of color and freshness to the salad. You can also add a dollop of whipped cream or yogurt, if desired.
  • Serve the salad as a side dish or a dessert: This salad is versatile and can be served as a side dish with a main meal, or as a dessert on its own. It's also a popular dish to serve at potlucks and holiday gatherings.
