12 cherry tomatoes
salt and black pepper to taste
¼ cup olive oil
1 bay leaf, crumbled
¼ cup pine nuts
⅔ pound thin green beans, trimmed
1 (5 ounce) package arugula leaves
6 fresh basil leaves, torn into pieces
1 tablespoon red wine vinegar
2 tablespoons whole-grain mustard
2 cloves garlic, minced
½ teaspoon honey
¼ cup olive oil
6 ounces crumbled feta cheese

Steps:

  • Preheat an oven to 225 degrees F (110 degrees C).
  • Slice the cherry tomatoes in half, and arrange them, cut sides up, on a baking sheet. Sprinkle them with salt, pepper, and the bay leaf; drizzle with 1/4 cup olive oil.
  • Bake the tomatoes until they are shriveled and dry on the outside, but a little moist inside, about 2 hours.
  • Toast the pine nuts in a small pan over medium-low heat, gently shaking the pan as they toast, until beginning brown and fragrant, 2 to 3 minutes; set aside.
  • Bring a saucepan of water to a boil; cook the green beans in the boiling water until bright green but still crisp, about 3 minutes. Drain and rinse immediately with cold water.
  • Combine the roasted tomatoes, toasted pine nuts, green beans, arugula, and basil in a salad bowl. Whisk together the red wine vinegar, mustard, garlic, honey, and 1/4 cup olive oil in a bowl, and pour the dressing over the salad. Stir in the crumbled feta cheese just before serving.

1 pound fresh green beans, trimmed
3 tomatoes, chopped
¼ cup olive oil
2 tablespoons white balsamic vinegar
salt and freshly ground black pepper to taste
1 shallot, minced
¼ cup chopped fresh parsley
1 clove garlic, minced
2 ounces crumbled feta cheese

Steps:

  • Bring a pot of lightly salted water to a boil and cook beans until they are soft, 10 to 15 minutes. Drain well. Combine green beans and tomatoes in a large bowl

3 large green tomatoes, cut into wedges
1 medium onion, sliced into thin rounds
3 cloves garlic, minced
1 dash salt
1/4 cup fresh basil, lightly packed & chopped
3 tablespoons extra virgin olive oil
1 1/4 cups feta cheese, crumbled
1 tablespoon of fresh mint, minced or 1 tsp dried
2 tablespoons fresh lemon juice
1 tablespoon olive oil

  • Preheat the oven to 500F degrees.
  • On a lightly oiled baking sheet, spread out the tomatoes and onions.

  • Bake for 15-30 minutes turning once or twice until tender and quite browned on the edges.

5 plum tomatoes, each cut lengthwise into 4 slices
1/4 pound haricots verts (thin French green beans) or small green beans, trimmed
2 tablespoons fresh orange juice
1/4 teaspoon fresh lemon juice, or to taste
1/4 teaspoon freshly grated orange zest
a heaping 1/4 teaspoon Dijon mustard
1 tablespoon olive oil
1 teaspoon minced shallot
1 cup mixed baby salad greens

Steps:

  • Preheat oven to 450° F. and lightly grease a baking sheet.
  • Arrange tomatoes in one layer on baking sheet and season with salt and pepper. Roast tomatoes in middle of oven 15 minutes, or until edges are browned, and cool.
  • While tomatoes are roasting cook beans in salted boiling water 3 minutes, or until crisp-tender. In a colander drain beans and rinse under cold water until cool. Drain beans and pat dry.
  • In a bowl whisk together juices, zest, mustard, oil, shallot, and salt and pepper to taste.
  • Arrange tomatoes, overlapping them, on 2 plates and mound mixed baby salad greens and beans on top. Drizzle salads with vinaigrette. Serves 2 as a first course or side dish.

1 lb green beans, green and yellow, ends snapped off
2 medium tomatoes, ripe (about one pound)
1 small shallot, minced
1 tablespoon lemon juice
2 tablespoons fresh parsley leaves, minced
fresh ground black pepper
2 ounces feta cheese, crumbled (1/2 cup)
2 tablespoons extra virgin olive oil

Steps:

  • Bring several quarts of water to a boil in a large saucepan. Add the beans and salt to taste. Cook until crisp-tender, about 5 minutes. Drain, shake dry and then spread out over a clean towel so they dry quickly. Let the beans cool to room temperature.
  • Combine the tomatoes, shallot, oil, lemon juice, parsley and pepper to taste in a large serving bowl.
