1 medium onion, chopped
10 ounces spinach, fresh
1 teaspoon lemon, zest of
1/4 cup feta cheese, crumbled
1 teaspoon table salt, divided
1/2 teaspoon black pepper, divided
1 lb boneless skinless chicken breast

Steps:

  • In a large nonstick skillet heat 1 teaspoon oil; sauté onion until golden, 5 minutes.
  • Wilt spinach (steam spinach or heat damp spinach over medium heat in nonstick pan); stir in zest, feta, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Set aside.
  • Divide spinach mixture between chicken breasts.
  • Roll up and secure with toothpicks.
  • Sprinkle with remaining salt and pepper.
  • In same skillet, heat remaining oil over medium-high heat.

These Spinach Stuffed Chicken Roll Ups are filled with yummy ricotta, sundried tomatoes and fresh mozzarella then topped with marinara sauce.

3 egg whites
1 cup breadcrumbs
6 chicken cutlets
1 tbsp olive oil
Salt & pepper to taste
1/2 cup ricotta cheese
1 cup mozzarella cheese, divided
1 cup finely chopped fresh mushrooms
1/2 cup sundried tomatoes
1 cup finely chopped spinach
1/2 tsp each Salt and pepper
1 cup jarred marinara sauce
1 tbsp fresh chopped basil (optional)

Steps:

  • Preheat oven to 400 F. Grease an 8x11 baking dish with 1 tbsp of olive oil and set aside. Add egg whites to a large bowl and breadcrumbs to another large bowl and set aside.
  • In a large mixing bowl, mix together ricotta, 1/2 cup mozzarella cheese, mushrooms, sundried tomatoes, spinach and 1/2 tsp salt and pepper.
  • Season chicken cutlets with salt and pepper. Lay each cutlet flat and fill with a thin layer of ricotta-spinach stuffing mix. Roll up chicken cutlets, then dip in bowl of egg whites, then bowl of breadcrumbs.
  • Add each chicken roll up to the greased baking dish and bake in the oven for 25 minutes. Remove from oven, top with marinara sauce and cheese and bake another 5-10 min until cheese is melted.
  • Garnish with basil (optional) and serve with your choice of green (I roasted a bunch of broccoli rabe with 1 tbsp of olive oil, a pinch of salt and two cloves of garlic at 400F for 10 min). Enjoy!

These spinach and feta stuffed chicken breasts are an easy dinner! Chicken cutlets stuffed with spinach, feta, ricotta then breaded and baked to perfection!

cooking spray or oil mister
1 tsp olive oil
1/2 medium onion (chopped)
2 cloves garlic (minced)
1/4 cup chopped scallions
10 oz package frozen chopped spinach (thawed and juice squeezed out)
1/4 cup chopped parsley
1 tbsp fresh dill
1/2 cup 2.5 oz crumbled Feta cheese
1/3 cup fat free ricotta
1/4 tsp kosher salt and pepper (plus more to taste)
8 thin skinless chicken breast cutlets (1.5 lbs total)
1 large egg
1 tbsp water
1/2 cup whole wheat seasoned breadcrumbs

Steps:

  • Preheat oven to 350°F. Spray a large baking sheet with spray.
  • Heat the oil a medium skillet. Add onions, garlic and scallions and sauté about 1 minute, until fragrant.
  • Add spinach, parsley, dill, 1/4 tsp kosher salt and pepper and cook another minute or until heated through.
  • Remove from heat and mix in the feta and ricotta cheese.
  • Season chicken lightly with more kosher salt and pepper to taste.
  • Place about 1/4 cup of spinach mixture in the center of the chicken and roll, then lay the chicken seam side down on a platter or piece of wax paper. Repeat with the remaining chicken.
  • Whisk the egg and water together in a small bowl with a pinch of salt. Place the breadcrumbs in another bowl.
  • Dip the chicken rolls into the egg mixture, then into the breadcrumbs and place seam side down on the baking sheet.
  • Repeat with the remainder then lightly spray to top of the chicken with cooking spray.
  • Bake about 25 minutes or until cooked through.
  • Follow steps above 1 through 9.
  • Preheat the air fryer to 400F. Spray both sides of the chicken with oil. Cook, in two batches 12 minutes turning halfway.

3 teaspoons olive oil
1 garlic clove, minced
5 ounces fresh spinach
1/2 cup reduced-fat feta cheese
2 teaspoons lemon juice
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon black pepper
1/2 teaspoon oregano leaves
4 (4 -6 ounce) boneless skinless chicken breasts, pounded to 1/4-1/2 inch thickness
2 large eggs, beaten
3/4 cup panko breadcrumbs
nonstick cooking spray
1 cup crushed tomatoes (they recommend Furmano's Chunky Crushed Tomatoes with Basil, Garlic and Oregano)

Steps:

  • Preheat oven to 350.
  • Heat 1 tsp olive oil in a large skillet over Medium heat.
  • Add garlic and saute 1-2 minutes or until fragrant.
  • Add spinach and cook until wilted, about 3-5 minutes, tossing constantly; remove from heat.
  • In a medium bowl, combine spinach, feta, lemon juice, crushed red pepper, black pepper and oregano; set aside.
  • Dredge each chicken breast into beaten egg, then panko breadcrumbs.
  • Spread one quarter of the spinach/feta mixture over chicken, then carefully roll up and secure with 2 toothpicks.
  • Repeat with remaining chicken breasts.
  • Heat remaining 2 tsp olive oil in a large skillet.
  • Add rolled chicken breasts to skillet and cook about 5-7 minutes or until browned on all sides.
  • Remove from heat and place in a square baking dish, sprayed with nonstick cooking spray.
  • Bake 20-25 minutes or until minimum internal temperature reaches 165.
  • Top with tomatoes and serve. Warm the tomatoes first, if desired.

200 g feta cheese, crumbled
1 small onion, finely chopped
200 g frozen spinach, defrosted and squeezed dry
1/2 cup dried breadcrumbs
2 lightly beaten eggs
1 tablespoon lemon juice
2 tablespoons pine nuts, toasted
1 tablespoon chopped of fresh mint
1/2 teaspoon dried dill
salt and pepper (lots of pepper)
2 sheets puff pastry, defrosted and cut in half
2 tablespoons milk

Steps:

  • Preheat oven to 200c.
  • Mix all ingredients together (except pastry sheets).
  • Lay pastry sheets (with plastic attached) out on your counter.
  • Fill a large piping bag (no nozzle) with the mix and squeeze out a long line of mix down the long edge of the pastry-about 1/2 an inch in from that edge.
  • No piping bag? Divide mix in 4 and spoon this along the long edge.
  • Roll up, peeling the plastic away as you roll.
  • Seal the inner edge with a little water.
  • Cut each of these rolls into three, then cut each smaller roll ALMOST through in the middle (leave the bottom intact). When they are cooked, I cut them right through to make a bite sized roll, but cooking them this way keeps them moister.
  • Place on a baking tray, brush each with a little milk, then cook in pre heated oven for about 20 minutes or until golden brown on top and cooked through.

1/3 cup re-hydrated sun-dried tomatoes
2 cloves garlic

12 leaves baby spinach
4 oz ATHENOS Traditional Crumbled Feta

Steps:

  • Pound chicken until 1/4" thick. Season with salt and pepper. Refrigerate until ready to use.
