2 tablespoons vegetable oil
1 (8 ounce) package fideo pasta
½ teaspoon ground cumin
½ teaspoon garlic salt
1 (8 ounce) can tomato sauce
1 tablespoon chili powder
1 ½ cups water

Steps:

  • Heat oil in a saucepan over medium-high heat. Add the fideo, and fry until browned. Pour in half of the can of tomato sauce, and 1 cup of the water. Season with cumin, garlic salt and chili powder, and stir to blend. Bring to a boil, and cook until the liquid has almost evaporated.
  • Stir in the remaining tomato sauce and water. Cover, and cook over medium heat for about 10 minutes, or until the fideo is tender, and the sauce has thickened.

2 tablespoons vegetable oil
4 skinless, boneless chicken breast halves
1 (12 ounce) package spaghetti noodles, broken in half
5 roma (plum) tomatoes, chopped
1 large onion, chopped
½ tablespoon ground cumin
2 ½ teaspoons chili powder
salt and pepper to taste
1 ½ cups water
1 cup shredded Cheddar cheese

Steps:

  • Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Cook chicken breasts in the oil until nicely browned on the outside. Remove from the skillet and set aside.
  • Add remaining oil to the skillet, and add the broken spaghetti. Cook, stirring constantly until spaghetti is browned. Drain off any excess oil, and add tomatoes and onion. Dice the chicken breasts, and return them to the skillet. Season with cumin, chili powder, salt and pepper. My fiance's mother always made her Fideo this way, and we just improved on it. It's really delicious and we always eat it with pieces of tortilla. Just some things to keep in mind: The spices are just guesstimated as we don't really measure things, so build up the flavors however you like them. We love the flavor of comino (cumin) so we add a LOT lol. We also enjoy more salt, so you can omit the salt from the meat seasoning if you're worried it's going to be too salty for your taste. Also, you can make this as soupy as you like. The amount I put makes it just a little soupy. It's also kinda easy to overcook the noodles, so be careful. Oh and in the picture, you can see beans. This is because we get a can of Charro beans on the side, and add some in as we serve ourselves. If you want, you can add the can to the dish itself, but I recommend draining it first.

1 (5 ounce) box vermicelli (fideo)
1/2 cup onion, diced
1/2 cup bell pepper, diced
4 ounces tomato sauce, half a can

3 cups water
2 potatoes, medium sized & diced
4 tablespoons vegetable oil
2 teaspoons salt
1 teaspoon pepper

1 teaspoon onion powder
1 teaspoon chili powder

Steps:

  • In a non-stick pan, heat 2 tbsp vegetable oil. Cook diced potatoes until they start to turn golden.
  • While potatoes are cooking, heat the other 2 tbsp vegetable oil in a separate pot. Mix the ground beef with the meat seasonings and cook until well done.
  • Drain the excess oil and water from the ground beef, and put it back to cook some more. Remove the potatoes from the oil and toss with the ground beef.
  • While the potato and beef mixture is cooking some more, brown the box of the vermicelli in the non-stick pan that has the remaining oil from cooking the potatoes.
  • When the vermicelli is done, drain any excess oil (there shouldn't be much if any) and then add to the potato and beef mixture, along with the beef bouillon, water, and tomato sauce.
  • Cook on high heat until it comes to a good boil, cover it and let it boil for 1-2 minutes. Turn off the heat completely and let sit for about 10 minutes. Serve and enjoy!

1 package Fideo (vermicelli, fideo, conchas, stars, or ABC's)
2 tablespoons olive oil
3 1/2 cups chicken broth
1/4 onion, diced
1 small clove garlic, minced
1 tablespoon cumin
1 tablespoon garlic powder
1 (7-ounce) can tomatoes
1 (4-ounce) can tomato sauce
1/2 lemon
Salt
Pepper
Potatoes, diced and cooked (optional)
Ground beef, cooked (optional)
Steak pieces, cooked (optional)

Steps:

  • Brown the fideo in olive oil. Once you can tell the fideo is starting to brown, toss in the onions and the minced garlic. Quickly sauté together, being careful to not burn the garlic. You want to cook the onion with the fideo to give it some flavor. Saute until the onions are a little translucent. Add broth, then immediately add cumin, garlic powder, tomatoes and tomato sauce, and lemon juice. Add salt & pepper to taste. (Here is where you should also add your diced potatoes, cooked ground beef or cooked steak pieces if you want.) Bring to boil and then lower the heat. Simmer 15 minutes. Should be soupy. Enjoy!

1 large onion, roughly chopped
1/2 cup water
2 teaspoon salt
6 cups chicken stock or vegetable stock
1 avocado, peeled, seeded and

  • In large saucepan or stockpot heat the oil or butter. Add pasta and saute until golden, stirring frequently and being careful not to burn. Stir in chiles and cook for 2 minutes longer. Meanwhile, combine tomatoes, garlic, onion, water and salt in a blender. Puree until smooth. Add tomato puree and stock to browned pasta. Cook over medium-low heat until the noodles soften and the flavors meld, about 15 minutes. Serve hot with the sliced avocado and cilantro as garnish.

2-3 green onions finely chopped or 1 small onion finely chopped

1 can(s) (14 1/2 oz) tomato sauce
1 tsp salt or to taste
1-2 can(s) water (fill the tomato sauce can and use it for your water to add to the fideo)

  • 1. Heat oil in a saucepan over medium heat.
  • 2. Add the garlic and onion and cook until they are tender but not browned.
  • 3. Next add the fideo to the onion and garlic mixture, and fry until a golden brown.
  • 4. Pour in the can of tomato sauce, and 1 can of the water and stir to blend. Bring to a boil, cut your heat down to low and cook with a cover until the liquid has almost evaporated.

This is a very old recipe around my home and in many other cities on the border. I used to eat this as a kid and I still enjoy it today. It is great as a side-dish or appetizer with Mexican food. It is also just a great snack. This is a vegetarian dish if you opt to use canola oil instead of lard. Also, note that you can use fideo (vermicelli) or any other type of small pasta such as small shells, alphabet, etc.

2 tablespoons canola oil or 2 tablespoons lard
1/2 large yellow onion, chopped
1 garlic clove, pressed
1 (7 ounce) bag star-shaped pasta (usually found in the Hispanic food section of the grocery store)
2 tomato-flavored bouillon cubes, with chicken flavor
1 (8 ounce) can tomato sauce
4 cups water
1/2 teaspoon ground cumin
salt & pepper (though probably will not need it- bullion is salty enough!)

Steps:

  • Put oil or lard in pan and brown the pasta. Make sure to watch it carefully as it burns easily.
  • Add the onion and garlic. Cook about 2 minutes, stirring frequently.
  • Add 8 oz. of tomato sauce and 3 cups of water. Bring to a boil.
  • Add bullion cubes and ground cumin.
  • Taste after bullion dissolves. Add salt and/or pepper, if desired.

2 pounds plum tomatoes, halved
8 cloves garlic, halved
1 large onion, roughly chopped
1/2 cup water
2 teaspoons salt
1/2 cup olive oil
12 ounces fideo, vermicelli or angel hair pasta, broken into 1inch pieces
4 dried chipotle chiles
2 cups chicken broth, preferably homemade
3/4 cup grated Anejo cheese
1 avocado, peeled and cut into 8 slices, for garnish
1 small bunch cilantro, leaves only, chopped, for garnish

Steps:

  • In a blender jar, combine the tomatoes, garlic, onion, water, and salt. Puree until smooth and set aside.
  • Preheat the oven to 350 degrees and lightly oil a medium baking dish. In a large heavy sauce pan heat the olive oil over medium low heat. Add the pasta and saute, stirring frequently, until golden brown. Be careful not to burn the noodles. Add the chiles and continue stirring over the heat for 2 minutes more. Add the tomato puree and the chicken broth to the pan and stir together until the liquid comes to a simmer, then transfer to the baking dish. Cover the dish with aluminum foil and bake for 10 to 15 minutes, until all the liquid has been absorbed and the noodles are tender. Remove the foil from the pan and distribute the cheese over the top and increase the oven heat to 400 degrees. Cook for 10 minutes more, until the top is bubbling and golden. Serve with a slice or 2 of avocado and a sprinkling of cilantro.

A favorite lunch dish at our house. I started with Debbwl's Recipe #366582 and made some adjustments to suit our tastes. We think it tastes very similar to spaghettios. Stewed tomatoes with sugar is necessary for the slightly sweet taste - if you substitute diced tomatoes, add a bit of sugar. I usually buy fideo in the ethnic food section (it's a popular pasta in Mexico). I have also substituted the tiny ABC pastas, but they take just a bit longer to cook.

1 (14 1/2 ounce) can stewed tomatoes, with liquid

8 cups chicken broth
6 bay leaves
1 boneless skinless chicken breast
1 teaspoon olive oil
1 poblano chile, seeded and cut into thin strips
1 small yellow onion, sliced
1 tablespoon garlic, Coarsely chopped
3 medium tomatoes
8 ounces vermicelli, broken into 3-inch pieces
1/4 cup warm water
1 dried chili (New Mexico type)
6 -8 fresh cilantro stems, leaves removed and reserved
1/2 teaspoon ground thyme
1/2 teaspoon ground cumin
1/2 teaspoon ground marjoram
1 tablespoon tomato paste

Steps:

  • Combine chicken broth, bay leaves and chicken breast in a large saucepan. Bring to a boil, reduce heat and simmer for 15-20 minutes until the chicken is tender. Remove the chicken from the broth. Remove and discard the bay leaves. Turn the heat down to the lowest setting to keep the broth warm. Chop the cooled chicken into small pieces.
  • Heat olive oil in small pan. Add the poblano pepper strips, 1/2 the sliced onion and the garlic. Saute until the vegetables are soft. Remove the vegetables from the pan and set aside to use as garnish.
  • Place the remaining onion in the same pan and saute until soft. Set aside.
  • Place whole tomatoes into hot chicken broth for 1 minute. Remove tomatoes and slip off skins. Set tomatoes aside.
  • Add vermicelli to simmering broth and cook for 4-6 minutes or until it is al dente. Remove the pasta from the broth and reserve.
  • Do not discard the broth.
  • Pour warm water over dried chili pepper to soften. This should take about 10 minutes. Chop cilantro stems and add to broth along with the thyme, cumin & marjoram, and tomato paste. Simmer for 10 minutes.
  • Drain softened chili pepper. Remove the stem, slit down the length and remove the seeds. Place the seeded chili pepper, peeled tomatoes, and sauteed onion in a blender or food processor and process until it is a paste consistency. Add to the simmering broth. Add pasta and chopped chicken.
  • Chop the reserved cilantro leaves finely. You should have about 2 tablespoons. Garnish soup with chopped cilantro, reserved poblano pepper strips and cooked onion slices.

How I remember it from Mama's kitchen

1 large chicken
1 medium onion
1 large bell pepper
3 medium tomato
4 clove garlic
3 Tbsp chipotle pepper
2 Tbsp paprika
1 Tbsp cumin
2 Tbsp chili powder
1 box vermicelli
1 can(s) tomato sauce

Steps:

  • 1. If you didn't buy it already cut up, cut up chicken and add to pot of water to boil, (skin and all) add 2tsp salt and pepper. will cook for 45-60min until chicken starts to pull away from the bones. remove chicken from water and place on plate. let cool. this last step very important, keeps you from burning your fingers. I usually place the chicken in the freezer while i complete the rest of the prep. you can pour the water into a bowl to save until used later in the dish. (saves on pots)
  • 2. dice up the onion, tomato, bell pepper, garlic, chipotle pepper and place them in a bowl. mix in the dry ingredients, cumin, paprika, chili powder. once that's done, take the chicken off the bone and from the skin. you can discard them or used them to make home made chicken stock...
  • 3. in the now empty pot (don't clean it in between) break the vermicelli into 1-1 1/2 pieces and place them into the pot over medium-high heat. don't add the water yet. you will stir the pasta until lightly browned. next you add the mixed ingredients and the chicken, stir thoroughly to mix well. add the water from the boiled chicken to just cover the mixture. cover the pot and cook for approx 15 min, stirring occasionally and adding the water as needed to keep from drying. after 15min, you will add the can of tomato sauce, mix well cover and turn down the heat to simmer for the next 10min. ready to serve.
  • 4. you can replace all the fresh ingredients with their canned or powdered cousins to decrease your work. highly recommended for my bachelor friends when trying to impress that special someone. Hope you enjoy this mexican meal I grew up eating.... thanks Mom.

3 tablespoons olive oil or 3 tablespoons bacon drippings
1/3 cup onion, chopped
1 green pepper, chopped

Steps:

  • Heat oil in heavy skillet. Saute onion and green pepper.
  • Add uncooked vermicelli and add saute over medium flame, stirring constantly until golden brown.
  • Add tomatoes and sugar, cover and steam for about 8 minutes or until vermicelli is "bitey" tender but still firm.
  • Salt and pepper to taste.

1 lb ground turkey
1 1/2 cups cut fideo pasta (can substitute angel hair or vermicelli, broken into 1 inch pieces)
1 cup sliced celery
1/2 cup chopped onion
1 (11 ounce) can corn or 1 (11 ounce) can mexicorn
1 (15 ounce) can tomato sauce
1 (14 ounce) can chicken broth
1 cup water
1 tablespoon chili powder
1 teaspoon cumin
1 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook ground turkey and fideo together until turkey is no longer pink.
  • Add remaining ingredients except cheese.
  • Heat to boiling, reduce heat and simmer covered until vegetables are crisp-tender, about 15 minutes.
  • Stir occasionally while cooking.
  • This makes a thick type soup.
  • If you want it more"soupy", you can add another can of chicken broth.
  • Serve in soup bowls with a garnish of cheese.

1 lb beef shank or short ribs (more if bones are large)
5 or so Chorizo de Aviles sausage links (see recipe)
12-18 baby onions
1 t. Saffron
2-3 diced potatoes
2 cans drained garbanzo beans
salt to taste (at end!)
Fideo noodle nests (angel hair pasta will work in a pinch)

Steps:

  • Cut up beef and chorizo and brown in olive oil in a large pot. Add 2-3 quarts water, bring to boil, and simmer 2 hours. Add onions and saffron and simmer 1 more hour. Add potatoes and gabanzos and simmer 1-1.5 more hours (or until potatoes are soft). Add salt to taste. Cook Fideo noodles separately in broth (about 10 minutes). Add noodles and soup to bowls and enjoy!
