8 5 1/2-inch extra-thin corn tortillas, or prepared tostada shells
Vegetable oil for frying
1 pound orange roughy, red snapper or other fish fillet
1 1/4 cups Key lime juice, or 1 cup lime juice and 1/4 cup lemon juice
1 tablespoon salt
1/2 teaspoon dried oregano
2 heaping tablespoons cilantro, coarsely chopped
1/4 red onion, thinly sliced
1 medium tomato, diced
Freshly ground black pepper to taste
Hot sauce (optional)

Steps:

  • To make tostada shells, lay tortillas in a single layer on a counter and cover with a dry towel for about 30 minutes. Heat oil to 1-inch depth in a large skillet to 380 degrees. Fry one at a time until golden, about 30 seconds per side. Drain on paper towels.

½ cup red bell pepper, diced
12 corn tostada shells
½ head iceberg lettuce, shredded
2 tomatoes, diced
1 cup grated queso fresco cheese
½ cup sour cream

Steps:

  • Brown ground beef in a medium sized pot until it is crumbled and no longer pink. Remove browned beef with a slotted spoon; set aside. Pour off the fat.

1/2 cup diced tomato
1 cup shredded cheddar cheese, divided
12 tostadas, warmed
1 1/3 cups guacamole
3/4 cup shredded lettuce
1/4 cup sliced black olives
1/4 cup sour cream

Steps:

  • In med. bowl, combine beans, 1/2c. salsa, tomatoes, and 1/2c. cheese; mix well.
  • In non-stick saute pan, heat thoroughly till cheese is melted. Spread equal portions of bean mixture over 4 tostada shells; place a tostada shell on top of each.
  • Spread equal portions of guacamole over each tostada; top with a third tostada.

1 cup ground beef
1 (14 ounce) package prepared pizza dough, or as needed
½ cup pizza sauce
¼ teaspoon ground cumin
1 pinch salt
1 ¼ cups shredded mild Cheddar cheese

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
