2 cups white-wine vinegar
2 cups low-sodium soy sauce
2 tablespoons freshly ground black pepper
2 heads garlic, cloves separated, smashed and peeled
12 bay leaves
4 pounds chicken wings, split at the joint, wingtips removed and discarded
1 tablespoon vegetable oil
1/4 cup finely chopped yellow onion
1 1/2 teaspoons minced peeled ginger
1/4 teaspoon ground turmeric
1/8 teaspoon ground allspice
1 clove garlic, minced
1/2 jalapeno, stemmed, seeded and minced
1 1/2 teaspoons tomato paste
2 very ripe bananas, mashed until smooth (about 1 cup)
1/4 cup white wine vinegar
1/4 cup packed light brown sugar
1 tablespoon soy sauce
1 tablespoon dark rum (optional)
1 large yellow onion, thinly sliced
2 tablespoons thinly sliced flat-leaf parsley leaves

Steps:

  • Combine the vinegar, soy sauce, pepper and smashed garlic in a blender and puree until smooth. Pour the mixture into a 12-inch wide, 2 1/4-inch deep nonstick skillet, stir in the bay leaves and submerge the wings in the marinade. Refrigerate for at least 2 hours and up to 6 hours.
  • Meanwhile, make the Banana Ketchup: Heat the oil in a small saucepan over medium heat. Add the onion and cook, stirring until softened, about 5 minutes. Stir in the ginger, turmeric, allspice, garlic and jalapeno and cook, stirring until fragrant, about 1 minute. Add the tomato paste and cook, stirring until lightly caramelized, about 1 minute. Add the mashed bananas, vinegar, brown sugar, soy sauce and rum, if using, and simmer, stirring occasionally, until slightly thickened, about 10 minutes. Scrape the sauce into a bowl, press a sheet of plastic wrap against the surface and let cool. You should have about 1 cup.
  • Remove the skillet from the refrigerator and place over high heat. Once the marinade begins to bubble, cook the wings, gently moving them around and flipping occasionally, until cooked through, about 25 minutes. Use tongs to transfer the chicken wings to a bowl and set aside. Stir the onion into the sauce and continue cooking over high heat, stirring occasionally, until the sauce is reduced to a glaze and the onions are soft, 5 to 10 minutes. Pour the glaze and onions over the chicken wings and stir to coat evenly.
  • Transfer the wings to a serving platter and top with parsley. Serve with banana ketchup on the side.

1 1/2 cups rice vinegar
1 1/4 cups soy sauce
1 1/2 tablespoons black peppercorns
1 1/2 teaspoons smoked paprika
1 1/2 teaspoons onion powder
7 bay leaves, broken in half
1 head garlic, minced (about 3 tablespoons)
24 chicken wings, drumettes and flats separated and rinsed
Kosher salt and freshly ground black pepper
Leaves from 7 sprigs fresh cilantro (about 2 tablespoons)

Steps:

  • Combine the vinegar, soy sauce, peppercorns, paprika, onion powder, bay leaves and garlic in a resealable plastic bag. Place the wings in the bag, then press out any air and seal. Move the bag around to completely coat the chicken, then refrigerate, flipping the bag at least once, at least 4 hours and up to overnight.
  • Preheat a grill to 350 degrees F.
  • Remove the wings from the marinade (discard the marinade). Grill the wings, covered, for about 10 minutes. Flip the wings, close the lid and continue to grill until cooked through or the internal temperature reaches 165 degrees F, another 10 to 20 minutes.
  • Allow the wings to rest for a few minutes. Season with salt and pepper and garnish with cilantro leaves.

6 fluid ounces mirin or 6 fluid ounces sherry wine

Steps:

  • Rinse chicken wings and palce in a shallow pan.
  • Place all the marinade ingredients in a blender or food processor and process until smooth.

The Chefs would not give me details as to how they made their recipes, except to tell me, add a little of this and a little of that to suit your taste. This recipe is not overpowering and has a delightful flavor.

4 tablespoons extra virgin olive oil
3 -3 1/2 lbs fryer chickens, cut into pieces
1 teaspoon haldi powder
1 tablespoon garam masala (curry powder)
1 tablespoon curry powder
1/2 teaspoon chili powder
4 whole cloves
1/2 piece cinnamon stick (about "2 1/2 inches" long)
1 tablespoon grated fresh gingerroot
4 garlic cloves, finely chopped
1/2 teaspoon salt
1/4 teaspoon ground cardamom
14 fluid ounces coconut cream or 14 fluid ounces coconut milk
2 medium onions, finely chopped
1 large potato, peeled and cubed 1/2 inch
1 large celery rib, chopped
1 large carrot, peeled and chopped small
2 teaspoons tapioca starch or 2 teaspoons cornstarch
1/4 cup cold water

Steps:

  • In a large frying pan, heat oil to medium heat.
  • Add chicken pieces and lightly fry on all sides, about 5 to 8 minutes.
  • Add haldi, garam masala, curry powder, chili powder, cloves, cinnamon stick, grated ginger, chopped garlic cloves, salt and cardamom.
  • Stir to coat chicken.
  • Add coconut cream, chopped onion, cubed potatoes, celery and carrot and cook covered for about 15 minutes or until vegetables are cooked.

2 sun-dried tomatoes
¼ cup white wine
¼ cup barbeque sauce
1 teaspoon sesame oil
1 tablespoon hot pepper sauce
2 tablespoons soy sauce
1 tablespoon distilled white vinegar
1 tablespoon honey
1 tablespoon cornstarch
20 chicken wings
2 teaspoons minced garlic
1 teaspoon chili powder
salt and pepper to taste
1 lime, cut into wedges
1 ½ teaspoons sesame seeds

Steps:

  • Place the sun-dried tomatoes and white wine into a blender; puree until smooth, then pour into a saucepan. Turn the wings frequently as they cook to ensure even cooking. Place the cooked wings on a serving platter; squeeze the lime wedges over the wings, and sprinkle with sesame seeds to serve.
