1 teaspoon dried oregano
1 teaspoon kosher salt
24 to 30 wonton wrappers, room temperature
4 Roma tomatoes, seeded and chopped
8 ounces canned tomato sauce
1/2 cup chopped Vidalia or sweet onion (from about 1/2 large)
1 cup vodka, your favorite
1 cup heavy cream, room temperature
8 ounces shredded Parmesan

Steps:

  • For the ravioli, in a medium bowl, combine the shredded cooked beef (or fresh chuck), cheese, garlic, onion pulp, oregano, and salt. Using both hands, mix and squeeze the beef and seasonings together.
  • To make the ravioli, lay a few wonton wrappers, flour side up, on a work surface and set a glass of water next to it. Scoop a spoonful of the beef filling (about 2 tablespoons) into the center of each wrapper. Wet your finger and lightly trace the border of each wonton. 14 ounces mushrooms, such as cremini and/or shiitakes, stems discarded and caps sliced 1/4 inch thick
1/2 cup ruby Port wine, such as Sandeman
3/4 cup crème fraîche
3 ounces Roquefort or other strong blue cheese, crumbled
1 tablespoon minced fresh parsley

Steps:

  • Preheat the oven to 500˚. Line a sheet pan with aluminum foil.
  • Place the beef on the prepared sheet pan and pat dry with paper towels. Spread 1 tablespoon of the butter all over the beef with your hands. Sprinkle the beef all over with 1 1/2 teaspoons salt and 1 teaspoon pepper. Roast for exactly 25 minutes for rare (120˚) and 30 minutes for medium rare (125˚). Remove the beef from the oven, cover tightly with aluminum foil and allow to rest for 20 minutes.
  • Meanwhile, make the sauce. Heat 2 tablespoons of the butter in a large (12-inch) sauté pan. Add the shallots and sauté over medium heat for 3 to 4 minutes, until tender but not browned. Add the remaining 4 tablespoons of butter and heat until sizzling. Add the mushrooms and sauté, stirring frequently, for 5 to 7 minutes, until lightly browned. Add the Port, 1 teaspoon salt and 1/2 teaspoon pepper and cook for 2 to 3 minutes. Add the crème fraîche and cook for one minute, until slightly thickened. Reduce the heat to low and add the Roquefort, stirring just until it melts. (If the sauce is too thick, add another splash of Port.)
  • Before serving, reheat the sauce and sprinkle with the parsley. Remove the strings from the roast and slice thickly. Spoon on the sauce, sprinkle with salt and serve hot.

One of the singular pleasures of eating out in New York City in the early years of the new century was the arrival of a plate of steaming beef-cheek ravioli at Babbo, Mario Batali's flagship restaurant on Waverly Place in Greenwich Village. The delicate pasta triangles glistened beneath a velvety sauce made of crushed squab liver livened with capers and anchovies. So I set out to make the things myself, at home. To do so required a few adjustments, of course. The truth is, Italian food demands but does not require the best ingredients and the haughtiest treatment. No cuisine so rooted in poverty ever can. So substitute chicken liver for the squab in the sauce. Substitute brisket for beef cheeks in the filling. As Batali said one day over coffee, you could use anything braised, anything soft.

3 tablespoons extra-virgin olive oil
1 medium white onion, chopped
1 celery stalk, chopped
1 pound beef brisket cut into 1-inch cubes (or short ribs)
1 cup red wine, plus more as needed
1/2 cup chopped fresh or canned tomatoes, plus more as needed
1 large pinch chopped fresh rosemary

Pasta dough for ravioli (see recipe)
5 tablespoons unsalted butter
Chicken livers Toscani (see recipe)

  • Preheat oven to 400 degrees. Place a large, ovenproof skillet over medium heat and add the oil. Add onion and celery and sauté until softened, about 10 minutes. Increase heat to high and (working in batches, if necessary) brown beef on all sides. Add the wine and deglaze the pan. Add tomatoes and rosemary. Season with salt and pepper. When the mixture returns to a boil, cover and place in oven until meat is fork-tender, 45 minutes.
  • Remove pot from oven and allow to cool. Skim off excess fat, transfer to a food processor, and pulse until smooth. If the mixture seems dry, add a tablespoon of wine or 1 or 2 tablespoons of tomatoes. Taste and adjust seasoning.
  • Cut sheets of pasta into 4-inch squares. Place 1 tablespoon beef filling into the center of each square. Wet edges of pasta with warm water, and bring two opposite corners of each square together to form a triangle. Press edges to seal. Put finished ravioli on a cookie sheet, cover with plastic and place in freezer until needed.
  • Bring a pot of salted water to a boil. Heat butter in a large sauté pan until it browns but does not burn. Add about half the chicken livers Toscani and sauté for 1 minute. Add 3 tablespoons of the salted water to loosen the sauce. Reduce heat to low and keep warm.
  • Add the ravioli to the boiling water and cook until they float to the surface, about 3 minutes. Using a slotted spoon, transfer ravioli to pan of chicken liver sauce. Add parsley and 1/4 cup grated pecorino. Toss lightly. Divide ravioli on four warm plates. Spoon extra sauce over each serving and top with cheese. Serve immediately.

Start forming a dough with two fingers while supporting the mound of flour with the other hand, then add the remainder of the egg mixture once the original amount is absorbed. Continue kneading the dough by hand until all the liquid has been absorbed, 5 to 6 minutes, dusting the work surface with flour as needed to prevent the dough from sticking. Once the dough is mixed well, roll it into a ball, wrap with plastic wrap and let rest in the refrigerator for 1 hour.
  • To assemble and fry: Split the rested dough into 2 balls and roll out each ball on a floured work surface to the thickness of a dime (or run them through a pasta machine three times on thickness settings of 8, 5 and finally 2). Score one of the sheets of rolled dough with a ravioli pin and fill each scored pocket with 1 teaspoon of the filling. Brush the edges of the dough with egg wash, lay the second sheet of rolled pasta on top and then press and seal the individual ravioli with your fingers, ensuring that no air is trapped inside. Cut and portion out the individual pieces.
  • In a large heavy-bottomed saucepan, heat the vegetable oil to 350 degrees F. Dredge the ravioli in the flour, followed by the egg wash, and finally the breading.
