- In a large saucepan, heat oil over medium. Add onion, potatoes, and fennel; season with salt and pepper. Cook, stirring frequently, until onion has softened, about 10 minutes (do not allow vegetables to brown).
- Add wine, increase heat to medium-high, and cook until liquid has nearly evaporated, 5 to 7 minutes.
- Add clam juice and 3 cups water. Bring to a boil, then reduce to a simmer; cook until potatoes are tender, 10 to 12 minutes.
- In a small bowl, whisk egg yolks. Whisking constantly, gradually ladle about 1 cup of hot liquid from saucepan into yolks; add mixture to pan. Add fish, and simmer gently until fish is opaque and soup is slightly thickened (do not boil), 4 to 5 minutes. Season with salt and pepper.
- Ladle soup into serving bowls; garnish with fennel fronds, if desired. Spread toasted bread with Lemon Aioli, and serve alongside soup.

- This is a very basic recipe, it encourages experimentation with additional ingredients.
- In Large Saucepan saute butter, pepper, onion, and garlic until onion is translucent.
- Add Chicken broth, tomatoes and clam juice, and potatoes if necessary, bring to boil; reduce heat to simmer.
- Add fresh herbs, splash of wine, salt and pepper to taste and let simmer for 3 minutes (or until potatoes are tender) stirring occasionally.
- Add fish and cook for 5-7 minutes or until fish is cooked.
- While fish is cooking in soup, make the aioli.
- In small bowl mix, mayo, garlic, lemon juice and cayenne.
- Put on the table.
- Serve soup in large bowls with plenty of sourdough and dollop of aioli.

- Whisk first 5 ingredients and 3 tablespoons oil in small bowl to blend. Season to taste with salt and pepper. (Aioli can be made 1 day ahead. Cover and refrigerate.)
- Heat remaining 3 tablespoons oil in heavy large pot over medium heat. Add leeks, carrots, fennel, and shallots; sauté until golden brown, about 15 minutes. Add garlic and sauté 2 minutes. Mix in tomatoes, tomato paste, thyme, and saffron. Add wine and boil 5 minutes. Add 5 cups stock and bring to boil. Reduce heat and simmer 15 minutes to blend flavors. Add fish and simmer until fish is cooked through, about 5 minutes. Cool slightly.
- Working in batches, puree soup in blender. Working in batches, strain soup through coarse sieve set over large bowl, pressing firmly to force as much of solids as possible through sieve. Return soup to pot. Season to taste with salt and pepper. (Can be made 1 day ahead. Cover and chill.)
- Spread enough aioli over each toast to cover. Bring soup to simmer, thinning with more stock, if desired. Ladle soup into bowls. Top each with 2 toasts. Sprinkle with parsley and serve.

- In a 6 quart saucepan or soup pot, heat the oil over low heat. Add the onion, celery, and garlic and cook until tender, 6 to 8 minutes. Add the white wine, tomato paste, saffron, stock, crushed red pepper, orange juice, and orange zest and bring to a simmer. Cook uncovered, for about 45 minutes, or until liquid is reduced by about one-third.
- Add the fennel and tomatoes and cook until the fennel is tender, about 20 minutes. Season with salt and freshly ground black pepper, to taste.
- Season the fish fillets with salt and freshly ground black pepper. Cut the fillets into 1 1/2-inch chunks. Add the fish, shrimp, and parsley to the broth and allow to cook, gently stirring only once or twice, until the fish is cooked through, about 5 minutes. - Preheat the oven to 350 degrees F.

- Cut the fish into 1-inch cubes.
- Heat the oil in a heavy casserole or skillet. Add the onions, leeks, garlic, red and green pepper and the saffron. Cook, stirring over medium high heat, until wilted.

- Cut the fish fillets into inch-and-a-half pieces. Peel the shrimp; cut the scallops in half if they are large. Sprinkle the saffron threads into half a cup of water and set aside.

HARVEY CEDARS FISH STEW WITH PARSLEY CROUTONS
Steps:
- Put a 16-quart stockpot over medium-high heat and coat with the oil. When the oil starts shimmering, add the fennel, spreading it evenly in a single layer over the bottom of the pot. Brown the fennel for about 2 minutes, rotating the pieces with tongs. Add the garlic and onion and cook, stirring, until soft and fragrant, 2 to 3 minutes. Toss in the clams and give them a stir to coat with the vegetables. Pour in the Pernod, wine, and tomatoes. Cover and cook until the clams open, about 5 minutes. Using a slotted spoon or spider strainer, transfer the clams to a bowl (discard any that don't open) and set aside. Bring the liquid to a boil, turn down the heat, and simmer, stirring occasionally, until the tomatoes cook down, 15 to 20 minutes.
- While the tomatoes reduce, preheat the oven to 375°F.
- Spread the bread liberally with the parsley sauce. Lay the slices side by side on a baking pan. Bake for about 10 minutes, or until the bread just starts to toast.
- Meanwhile, pour 2 cups water and the clam juice into the pot; season with the salt and pepper. Bring to a rapid boil over medium-high heat. Carefully ease the lobsters into the boiling liquid, cover the pot, and steam for 8 minutes, flipping them over with tongs halfway through cooking; the shells should be bright red. Using tongs, carefully remove the lobsters from the pot and put them on a large platter.
- Now add the mussels, shrimp, scallops, and swordfish to the pot. Toss in the tarragon and parsley, cover, and simmer for 4 minutes.
- With two large chef's knives, split the lobsters in half down the body. Place the knuckles and claws on the work surface and give them a whack to crack them open. Put the calamari and reserved clams in the pot and set the lobsters on top. Cover the pot for a minute so everything gets nice and hot; do not stir because you'll break up the fish.
- For drama, I like to take the whole pot to the table and serve it in front of guests. Divide among large pasta bowls, being sure to ladle plenty of broth into each. Put a large dollop of aïoli, if using, on each crouton. Float the croutons on top of the stew. Serve the remaining croutons on the side . . . people always want another.
- Saffron Aïoli
- Combine the saffron with 2 tablespoons warm water in a small bowl, stir, and let steep for 5 minutes to release the saffron color and flavor.
- In a small bowl, whisk the mayonnaise, lemon juice, and garlic. Gradually whisk in the saffron water until well blended. Cover and store in the refrigerator for up to 5 days.
