Time 26m

Number Of Ingredients 8

2 tbsp finely grated fresh root ginger
4 garlic cloves , finely grated or crushed
2 whole sea bream or red snapper (about 900g/2lb each) or 6 fish steaks like tuna
6 tbsp plain yogurt
2 tbsp olive oil
2 tsp turmeric
2 tsp mild chilli powder
3 tsp cumin seed

Steps:

  • Slash the skin of the whole fish, if using, on each side with a sharp knife. Mix the ginger and garlic, season with salt, then rub all over the fish.
  • Mix the yogurt with the oil, spices and seasoning. Use to coat the fish inside and out, then chill until ready to cook.
  • TO BARBECUE: Cook straight on the rack (or on foil if you are afraid of it sticking) for 6-8 mins each side for the whole fish, or 3-4 mins for the tuna steaks. Cooking time will depend on how hot your barbecue is when you start.

Tips:

  • Choose the freshest fish possible for your tikka. Fresh fish will have a mild, sweet smell and firm, shiny flesh.
  • If you are using frozen fish, thaw it completely before cooking. This will help the fish to cook evenly.
  • Marinate the fish in yogurt and spices for at least 30 minutes, or up to overnight. This will help the fish to absorb the flavors of the marinade.
  • Cook the fish over medium heat. This will help to prevent the fish from overcooking and becoming dry.
  • Serve the fish tikka with a variety of sides, such as rice, naan, or salad.

Conclusion:

Fish tikka is a delicious and flavorful dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With a little planning and effort, you can create a delicious fish tikka that will impress your friends and family.
