Low-carb salsa, as needed

  • Preheat oven to 400 degrees F.
  • Stack the slices of American cheese and cut it into 16 small squares. Separate the pieces, and transfer them to a small bowl. Add the salt, chili powder, and garlic powder toss to combine. 3/4 cup parmigiano-reggiano cheese
1/3 cup flat leaf parsley
3 tablespoons chopped fresh chives
2 tablespoons fresh thyme leaves
1 tablespoon Old Bay Seasoning
1 teaspoon garlic powder (optional) or 1 teaspoon granulated garlic (optional)
flour, for coating
2 large eggs, beaten
splash heavy cream or half-and-half
extra-virgin olive oil, for frying (EVOO)
4 sole fillets or 4 tilapia fillets, rinsed and patted dry
salt and pepper

Steps:

8 tablespoons (1 stick) unsalted butter, cut into 5 pieces
1/2 teaspoon table salt
1/2 cup freshly grated Parmesan cheese
5 tablespoons plus 1 teaspoon cold water
1 large egg yolk

Steps:

  • Preheat oven to 425 degrees. Line 2 baking sheets with parchment paper. In food processor, combine flour, butter, salt, and cheese. Pulse until mixture resembles coarse meal. Add the 5 tablespoons cold water; pulse until the dough just comes together. Shape dough into a disk.
