Time 18m

Yield 4 serving(s)

Number Of Ingredients 13

1 tablespoon olive oil
1 medium onion, chopped
1/2 sweet red pepper, cored, seeded and chopped
2 garlic cloves, chopped
1 (14 1/2 ounce) can stewed tomatoes
1/2 cup white wine
1 tablespoon capers
12 kalamata olives or 12 black olives, pitted
1 lemon, zest and juice
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon black pepper
4 fillets, white fish (5-6 oz., tillapia, flounder, catfish)

Steps:

  • Heat oil in a large non-stick skillet over medium-high heat. Add onion, red pepper, and garlic. Cook about 6 minutes, until softened, stirring so garlic does not burn.
  • Stir in tomatos, wine, capers, olives, lemon zest and juice, oregano, salt and pepper.
  • Bring to a boil. Add fish and cook, covered, over medium-low heat for about 8-10 minutes or until fish flakes easily. Gently turn fish halfway through cooking.

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients prepped and measured out. This will help the cooking process go smoothly and efficiently.
  • Use fresh, high-quality ingredients: The fresher your ingredients, the better your dish will taste. Whenever possible, buy organic or locally grown produce.
  • Don't overcrowd the pan: When cooking the fish and vegetables, make sure not to overcrowd the pan. This will prevent them from cooking evenly.
  • Season to taste: Season the fish and vegetables with salt, pepper, and other herbs and spices to taste. Be careful not to over-season, as you can always add more seasoning later.
  • Cook the fish and vegetables until tender: The fish should be cooked until it is flaky and the vegetables should be cooked until they are tender but still have a bit of a bite to them.

Conclusion:

This Mediterranean-inspired fish and vegetable dish is a delicious and healthy meal that is perfect for any occasion. The combination of fresh fish, colorful vegetables, and flavorful sauce is sure to please everyone at the table. So next time you're looking for a quick and easy meal that is also good for you, give this recipe a try. You won't be disappointed!
