My friend came over and brought me some figs from her yard. I'm such a fan of fresh figs. They are pretty versatile, simply sweet, and go really well with savory dishes. Especially when you drizzle some balsamic reduction on the figs and pair it with a creamy cheese.....mouthwatering. Since, I was in the mood for bread and cheese, we decided to make Fig, Caramelized Onions, Goat Cheese, and Arugula Flatbread. You can use any flavored goat cheese. However, we found a fig flavored one, so it just seemed perfect for the dish. Also, if you have a salt grinder, use that when you sprinkle the salt on top. It makes the dish pop a little more.

- Heat the olive oil in a medium fry pan over medium-low heat. Add the onions, salt, and pepper, and cook for 20 minutes, stirring occasionally. The heat should be low enough that the onions sizzle quietly but don't brown too quickly. Add the sugar and continue to cook for another 15 to 20 minutes, until the onions are dark golden and a darker brown crust begins to form on the bottom of the skillet. Turn off the heat and set aside. Preheat the oven to 425 degrees. Brush a bit of olive oil on each flatbread and sprinkle on some kosher salt. Put some arugala on each. Scatter the onions evenly over each flatbread and crumble one ounce of goat cheese on each. Put fig spread on sparingly. - Drizzle the olive oil in the bowl. Add the dough and turn to coat in the oil. Cover with a kitchen towel and let rise for 1 hour, or until doubled in size.
