1 cup powdered sugar, sifted (confectioner's sugar)
water
marshmallows
candy cane (or peppermint candies)
chocolate sprinkles
colored hard candies
red and blue candy sprinkles
green sprinkles
flavored colored coarse sugar

Steps:

  • Stir together powdered sugar with water, a teaspoon at a time(3-4 teaspoons total), until it is the consistency of a thin glaze.
  • Dip half of marshmallow in glaze, lightly shaking to remove excess.
  • Roll glazed end of marshmallows in finely crushed candy canes(or peppermint candies, sprinkles, etc.).
  • Place on waxed paper coated side up to set.
  • Thread on skewers and serve with drink of choice.

2 cups graham cracker crumbs
4 Homemade Marshmallows, recipe follows
4 cups semisweet chocolate chips
2 tablespoons (2 envelopes) unflavored gelatin
1/2 cup granulated sugar
2 teaspoons light corn syrup
2 egg whites
1 1/2 teaspoons vanilla extract
Powdered sugar, as needed

Steps:

  • Line a baking sheet with parchment paper. Place the graham cracker crumbs in a shallow dish and set aside. Spear the marshmallows with the cocktail picks.
  • Melt the chocolate chips in a double boiler over medium heat, stirring occasionally. Dip the marshmallow sticks in the chocolate, one at a time, and let any excess drip off. Roll in the graham cracker crumbs and place on the prepared baking sheet. Serve immediately. Or if you'd like the chocolate to set, refrigerate about 1 hour before serving.
  • Line a baking sheet or dish with parchment paper. Stir the gelatin into 1/3 cup water.
  • Place the granulated sugar, 1/3 cup water and corn syrup in a small saucepan over medium-high heat. Bring to a boil, stirring, and cook until the sugar dissolves and the temperature reaches 240 degrees F. Carefully pour the sugar mixture into the gelatin mixture, stirring constantly. Let sit for 5 minutes.
  • Using an electric mixer, whip the egg whites until soft peaks form. With the mixer on medium-low speed, pour the sugar-gelatin mixture into the egg whites in a slow, steady stream. Continue whipping until stiff peaks form. Pour the mixture into 8-by-8-inch baking sheet or dish and refrigerate until stiffened, about 3 hours.
  • Turn the marshmallow out onto a surface sprinkled with powdered sugar; peel off the parchment. Cut into 4 cubes and insert a bamboo stick into each.

12 ounces wafers (in any color you like) for candy coating (see note)
48 marshmallows
1 28-inch lollipop sticks
Plastic foam block or another support for the sticks
Aluminum foil
Wax paper
1 cup or more edible decorations (crushed nonpareils, jimmies, sequins, sprinkles)

Steps:

  • Simmer candy wafers in the top of a double boiler, stirring occasionally (do not let them stiffen). Thread 4 marshmallows on each stick. Cover a square of plastic foam with aluminum foil.
  • Hold a marshmallow stick over the pan and spoon the melted coating over it, covering it more or less completely. Hold over a piece of wax paper and sprinkle with edible decorations -- the zanier and more colorful the better. Insert the stick into the foam. Repeat with remaining marshmallows. Refrigerate until coating hardens.

  • In a microwave safe bowl, or in a bowl set over a pan of simmering water, melt the chocolate. If microwaving, heat for 1 minute, then continue to heat at 30 second intervals, stirring each time, until chocolate is melted and smooth.
