THE BEST MASHED POTATOES
This is our go-to recipe for classic mashed potatoes, made with plenty of butter and cream. To make them fluffy and flavorful, be sure to simmer them slowly and add plenty of salt to the cooking water. And don't skip the step of steaming the excess water off; leaving too much moisture in the potatoes causes them to be loose and gluey.

Steps:
- Wash and scrub the sweet potatoes.
- I leave the peels on for texture and nutrients, but feel free to peel them.
- Quarter the sweet potatoes and cut into slices about 1/4 inch thick.
- Combine butter, cream, salt, sugar, and sweet potatoes in a large saucepan. (you can also substitute milk or half and half for the cream).
- Cook covered over low heat, stirring occasionally untill potatoes fall apart when poked with a fork. About 30-40 minutes. (Microwaving also works. It takes a little shorter, but cooking time varies-about 20 minutes).
- Turn off heat and mash the potatoes with a hand mashed (preferred) or a handmixer.
- Stir in remaining ingredients and whip to make fluffy.
- Also try sprinkling some dried cranberries or chopped walnuts on top :).

Tips:
- Use the right potatoes: Yukon Gold and Russet potatoes are the best choices for mashed potatoes, as they have a high starch content that makes them creamy and fluffy.
- Boil the potatoes in salted water: Salting the water helps to flavor the potatoes and prevents them from becoming bland.
- Drain the potatoes thoroughly: This will help to prevent the potatoes from being watery.
- Mash the potatoes with a potato ricer or food mill: This will give you the smoothest and creamiest mashed potatoes.
- Add butter, milk, and cream: These ingredients will help to make the mashed potatoes rich and flavorful.
- Season the mashed potatoes with salt, pepper, and garlic powder: You can also add other herbs and spices, such as chives, parsley, or rosemary.
- Serve the mashed potatoes hot: Mashed potatoes are best served immediately after they are made.
Conclusion:
Mashed potatoes are a classic side dish that can be enjoyed by people of all ages. They are simple to make and can be customized to your liking. Whether you like them plain or loaded with toppings, mashed potatoes are a delicious and satisfying dish.
