Time 40m

Yield 4

Number Of Ingredients 11

⅔ cup all-purpose flour
⅔ cup grated Parmesan cheese
1 ⅓ cups bread crumbs
1 teaspoon poultry seasoning
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon pepper
1 ½ cups milk
12 ounces chicken tenderloins
1 ½ cups vegetable oil for frying

Steps:

  • In a large plastic bag, combine the flour, Parmesan cheese, bread crumbs, poultry seasoning, onion powder, garlic powder, salt and pepper. Shake to mix.
  • Heat the oil in a large skillet over medium heat until a drop of water evaporates immediately. Dip one piece of chicken at a time into the milk, and then place in the bag with the coating. Shake until fully coated. Place in the frying pan, and continue with remaining chicken.
  • Cook until the edges are browned, then flip and cook until browned on the other side. If some chicken is done sooner, keep on a paper towel lined plate in a warm oven, so that the chicken is all still warm at serving time.

Time 1h15m

Yield 4

Number Of Ingredients 7

1 1/2 cups milk
2 large eggs
2 1/2 cups all-purpose flour
2 tablespoons salt (plus additional for sprinkling)
2 teaspoons black pepper
4 pounds chicken (bone-in, skin-on pieces)
3 cups vegetable oil (or amount needed for frying)

Steps:

  • Gather the ingredients. Preheat the oven to 200 F and place a rack in a large baking pan.
  • In a medium bowl, combine the milk and eggs. Whisk to blend well.
  • In a large heavy-duty resealable plastic food storage bag, combine the flour, 2 tablespoons salt, and pepper. Seal and shake to combine.
  • Dip the chicken pieces in the milk and egg mixture and let excess drip off into the bowl. Set already dipped pieces aside on a plate until you have three or four.
  • Add the dipped chicken pieces to the bag of seasoned flour.
  • Seal the bag and shake well to coat the chicken pieces thoroughly.
  • Remove to a plate and repeat with the remaining chicken pieces.
  • Heat the oil in a deep, heavy skillet to 350 F. While it's heating up, set aside a large serving plate lined with paper towels.
  • Fry the chicken, a few pieces at a time, for about 10 minutes on each side, or until golden brown and thoroughly cooked. Be careful not to put too many chicken pieces in at once-even if they can comfortably fit-since this will dramatically drop the temperature of the oil, affecting the crispness of the final product. Note that chicken breasts will take a little less time than dark meat pieces.
  • With a slotted spoon, move the done chicken pieces onto the paper towel-lined platter to drain. Sprinkle immediately with salt.
  • Transfer the drained and seasoned chicken to the prepared pan with a rack. Keep warm in the preheated oven while frying subsequent batches. Depending on the size of your pan, this recipe will require about 3 to 4 batches.

THE "PERFECT" SOUTHERN FRIED CHICKEN

The

Posted in the June 28th Chicago Tribune Food section - great tasting chicken! This recipe combines the best advice of the experts: brining for moist, juicy chicken; marinating in buttermilk for tenderness; seasoned flour for a crisp crust; and a little bacon grease mixed into the frying fat to add savory flavor. The brining and marinating mean you'll have to think ahead--start this recipe at lunchtime the day you'll set it on the table. Remember that the side you start frying a piece on will always look better than the other side.

Yield 6 serving(s)

Number Of Ingredients 11

1 cup salt
1 quart water
1 whole chicken, cut up into 8 pieces
2 cups buttermilk
1 teaspoon hot sauce
1 cup flour
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon black pepper
4 cups vegetable oil
2 tablespoons bacon grease or 2 tablespoons lard

Steps:

  • Dissolve salt and water in a large bowl; add the chicken. Cover; refrigerate 3-4 hours. Pour off the brine; rinse the chicken well under running water in the bowl. Drain. Add buttermilk and hot sauce to chicken. Cover bowl; refrigerate for at least 1 hour or up to 8.

Cook until chicken is golden brown, 5-10 minutes. Remove drumsticks and thighs from skillet to a rack placed over a cookie sheet; place in oven.

Tips:

  • Use a cast-iron skillet for the best results. It will help to evenly distribute the heat and create a crispy crust.
  • Make sure your chicken is completely dry before frying. This will help to prevent splattering and ensure that the chicken cooks evenly.
  • Season the chicken liberally with salt and pepper. You can also add other spices, such as garlic powder, onion powder, or paprika.
  • Preheat the oil to 350 degrees Fahrenheit before adding the chicken. This will help to prevent the chicken from sticking to the pan and ensure that it cooks evenly.
  • Fry the chicken in batches so that it doesn't overcrowd the pan. This will help to prevent the chicken from steaming and ensure that it cooks evenly.
  • Cook the chicken until it is golden brown and crispy on the outside and cooked through on the inside. This will take about 10-12 minutes per side.
  • Transfer the cooked chicken to a paper towel-lined plate to drain. This will help to remove any excess oil.
  • Serve the chicken hot with your favorite sides, such as mashed potatoes, coleslaw, or green beans.
