OAT, FLAX 'N BANANA BREAD
This is the Banana bread I make for days I skip breakfast, or want I something kinda sweet before bed. I really came up with this through trial and error. I wanted a banana bread that was healthy enough that I didn't hate myself when I went back for another slice. The oat flour and ground flax I use are the Bob's Red Mill brand. This can easily be made into muffins.

- Combine sugar, oil and egg--mixing until creamy.

- Pour batter into loaf pans and bake approximately 1 hour-testing with a toothpick at the hour, and then as needed.
- Note: Because the batter is dense you will need to watch the baking time to be sure it is adequate--don't only go by color, flax seed will add darkness.

EASY LOWER SUGAR BANANA FLAX BREAD
This is more of a moderated version of a baking mix banana bread, made with less sugar and the addition of flax seeds for an omega boost! I picked the recipe up off a website somewhere and wrote it down on a note pad. I altered the sugar and honey amounts, and added the flax.

Tips:
- Use ripe bananas: The riper the bananas, the sweeter and more flavorful your bread will be.
- Don't overmix the batter: Overmixing can result in a tough, dense bread. Mix just until the ingredients are combined.
- Let the batter rest: Allowing the batter to rest for a few minutes before baking allows the flavors to meld and the bread to rise more evenly.
- Bake the bread at the right temperature: The ideal temperature for baking banana bread is 350°F (175°C). Baking at a higher temperature can cause the bread to overcook and become dry.
- Don't overbake the bread: Overbaking can also result in a dry, tough bread. Check the bread for doneness by inserting a toothpick into the center. If it comes out clean, the bread is done.
Conclusion:
Flax banana bread is a delicious and nutritious bread that is easy to make. It is a great way to use up ripe bananas and is a healthier alternative to traditional banana bread. With its moist, flavorful texture and nutty flavor, flax banana bread is sure to be a hit with everyone who tries it.
