Time 45m

Yield 3 to 4 servings

Number Of Ingredients 17

1 Vidalia onion, skin removed
2 eggs
1 cup milk
1 cup all-purpose flour
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 1/2 teaspoons cayenne pepper
1/4 teaspoon dried oregano
1/8 teaspoon dried thyme
1/8 teaspoon ground cumin
Peanut oil, for frying
Creamy dill dipping sauce, recipe follows
3/4 cup buttermilk
1/4 cup mayonnaise
1 tablespoon freshly chopped dill leaves
1/2 lemon, juiced
Salt and freshly ground black pepper

Steps:

  • Heat oil in a deep-fryer to 350 degrees F.
  • Whisk together the egg and the milk in a medium sized bowl.
  • In a separate bowl combine the flour, salt, peppers, oregano, thyme, and cumin.
  • Slice 1/2-an inch off the top of the onion and the bottom of the onion. Slice the onion in half, about 3/4-of the way down without slicing all the way through. Slice into quarters, then into 1/8s. Repeat this until you have cut the onion into 14 sections. Spread the "petals" of the onion apart and dip the onion in the milk mixture. Then coat it liberally with the dry ingredients. Separate the "petals" and sprinkle the dry coating between them.
  • Place the battered onion in the hot oil and fry until golden brown, about 10 minutes. Remove to a paper towel lined sheet tray and season with salt and pepper.
  • In a small bowl, combine ingredients and whisk together. Season with salt and pepper, to taste. Serve with Fried Vidalia Onion.

FLOWERING VIDALIA ONION

Time 1h15m

Yield 4

Number Of Ingredients 17

1 cup all-purpose flour
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon cayenne pepper
¼ teaspoon dried thyme
1 egg, beaten
1 cup milk
1 large Vidalia or other sweet onion, peeled
½ cup creamy salad dressing (such as Miracle Whip™)
2 tablespoons prepared horseradish
2 teaspoons ketchup
¼ teaspoon paprika
¼ teaspoon salt
¼ teaspoon cayenne pepper
⅛ teaspoon dried oregano
¼ teaspoon black pepper
1 quart vegetable oil for frying

Steps:

  • Whisk together the flour, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon cayenne pepper, and thyme in a bowl, and set aside. Whisk together the egg and milk in a separate small bowl, and set aside.
  • "Flower" the onion by cutting 1 inch off of the top of the onion, leaving the root intact. Make slices in the onion from top to bottom, 1/2 inch apart, making sure not to cut the roots. Gently separate the pieces of the onion making it look like a blossom. Dip the onion flower into the milk mixture, making sure to moisten all of the "petals". Coat the flower with the seasoned flour, and gently shake off any excess flour. Place the onion onto a plate, and refrigerate for 45 minutes.
  • Stir together the creamy salad dressing, horseradish, ketchup, paprika, 1/4 teaspoon salt, 1/4 teaspoon cayenne pepper, oregano, and 1/4 teaspoon black pepper to make the dipping sauce for the onion.
  • Heat the frying oil in deep-fryer to 350 degrees F (175 degrees C).
  • Fry the onion in the hot oil until the onion is tender on the inside, and crispy golden brown on the outside, 10 to 12 minutes. Drain upside down on a paper towel-lined plate for several minutes before serving with the sauce.

Tips:

  • Choose small to medium-sized Vidalia onions for flowering. Larger onions are more likely to bolt, or produce a seed stalk, before they have a chance to flower.
  • Plant Vidalia onions in well-drained soil that is rich in organic matter. The soil should have a pH of 6.0 to 6.8.
  • Plant the onions 4 to 6 inches apart and 1 inch deep. Water them regularly, especially during dry spells.
  • Fertilize the onions every few weeks with a balanced fertilizer. Do not over-fertilize, as this can cause the onions to produce more leaves than flowers.
  • Pinch off the tips of the onion leaves when they are about 6 inches long. This will help to encourage the onions to produce flowers.
  • Vidalia onions typically flower in late spring or early summer. The flowers are usually purple or white and have a sweet fragrance.

Conclusion:

Flowering Vidalia onions are a beautiful and unique addition to any garden. They are easy to grow and care for, and they produce beautiful flowers that are also edible. The flowers can be used in salads, soups, and other dishes. If you are looking for a new and interesting way to grow onions, flowering Vidalia onions are a great option.
