Steps:
- Combine together the flour, sugar (or sweetener), baking powder, baking soda and salt in a large-sized bowl. Make a well in the centre and add the milk, slightly cooled melted butter, vanilla and egg.
- Use a wire whisk to whisk the wet ingredients together first before slowly folding them into the dry ingredients. Mix together until smooth (there may be a couple of lumps but that's okay).(The batter will be thick and creamy in consistency. If you find the batter too thick -- doesn't pour off the ladle or out of the measuring cup smoothly -- fold a couple tablespoons of extra milk into the batter at a time until reaching desired consistency).
- Set the batter aside and allow to rest while heating up your pan or griddle.
- Heat a nonstick pan or griddle over low-medium heat and wipe over with a little butter to lightly grease pan. Pour ¼ cup of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup.
- When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
- Serve with honey, maple syrup, fruit, ice cream or frozen yoghurt, or enjoy plain!

Steps:
- Whisk milk and lemon juice in a medium bowl and set aside to let thicken.
- In a separate bowl, whisk dry ingredients together - flour, sugar, baking powder, baking soda, salt.
- Whisk the egg and melted butter into the milk mixture.
- Create a little "well" in the center of dry ingredient bowl and pour the milky mixture in the center.
- Whisk gently until just combined, there should still be lumps.
- Heat a pan or griddle to medium heat and coat with butter or vegetable oil.
- Pour pancake mixture by 1/4 cups and heat until large bubbles come to the top (about 1-2 minutes).
- Flip the pancake and wait another 1-2 minutes.
Tips:
- Choose the Right Flour: All-purpose flour is a good choice for pancakes, but you can also use whole wheat flour, buckwheat flour, or a gluten-free flour blend for a healthier option.
- Use Buttermilk: Buttermilk gives pancakes a fluffy texture and a slightly tangy flavor. If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to regular milk and letting it sit for 5 minutes.
- Don't Overmix the Batter: Overmixing the batter will make the pancakes tough. Stir just until the ingredients are combined and there are still a few lumps.
- Let the Batter Rest: Letting the batter rest for a few minutes before cooking allows the gluten to relax, which makes the pancakes more tender.
- Cook the Pancakes Over Medium Heat: Cooking the pancakes over medium heat will help them cook evenly without burning.
- Flip the Pancakes Only Once: Flipping the pancakes too often will make them tough. Flip them only once, when the edges are dry and bubbles start to form on the surface.
Conclusion:
With a few simple tips and tricks, you can make fluffy and delicious pancakes at home that will satisfy your cravings. Whether you like them classic with butter and syrup, or topped with fresh fruit, whipped cream, or nuts, pancakes are a versatile dish that can be enjoyed for breakfast, lunch, or dinner.
