This recipe has no added sugar so it is great for Diabetics. It is a favorite in our house. I first tried this recipe as a regular dessert and later tried it without sugar and found it to be just as good.

1 ¾ cups graham cracker crumbs
½ cup butter
½ teaspoon ground cinnamon
1 (.6 ounce) package sugar free lemon flavored Jell-O®
1 cup boiling water
1 (8 ounce) package reduced fat cream cheese
2 teaspoons vanilla extract
1 cup frozen light whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, butter and cinnamon. Mix well and press into the bottom of a 9 inch square pan. Bake in preheated oven for 8 to 10 minutes. Remove from oven and allow to cool.
  • Dissolve lemon gelatin in boiling water. Let cool until thickened, but not set. In a large bowl, beat cream cheese and vanilla until smooth. Blend in lemon gelatin. Fold in whipped topping.
  • Pour filling into crust. Sprinkle top with graham cracker crumbs. Refrigerate over night.

1 (9 inch) reduced fat graham cracker pie crust
2 (8 ounce) packages cream cheese
½ cup white sugar
1 ½ tablespoons all-purpose flour
2 ½ tablespoons lemon juice
½ cup egg substitute
1 (8 ounce) container nonfat lemon yogurt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.)
  • In a large bowl, beat cream cheese and sugar until smooth. Beat in flour. Beat in lemon juice and egg substitute. Stir in yogurt. Pour into crust.

1/4 cup reduced-calorie margarine, melted
2 cups 1% fat cottage cheese
3/4 cup egg substitute
1/2 cup fresh lemon juice
1/4 cup all-purpose flour
1/4 cup sugar
5 (1 g) packets artificial sweetener (calorie-free sweetener such as Equal, etc.)

Steps:

  • Combine cracker crumbs and margarine; stir well.
  • Press into bottom of a 9 inch springform pan. Freeze 30 minutes.
  • Preheat oven to 300*.
  • Place cottage cheese in a food processor or blender; process 1 minute or until very smooth, stopping once to scrape down sides.
  • Add egg substitute and next 5 ingredients; process until smooth.
  • Pour mixture into prepared crust. Bake at 300* for 50 minutes or until almost set (center will be soft but will become firm when chilled).
  • Remove from oven; cool on wire rack.
  • Cover and chill at least 8 hours.
