SOUTHWEST FOUR BEAN SALAD SUPREME

Southwest Four Bean Salad Supreme image

Tim and I came up with this recipe after having a deli salad that we thought we could make on our own...and better. This is a very versatile recipe. I have served it on a bed of greens and have added chopped grilled chicken on occasion. You can also add a can of quartered artichoke hearts and a jar of chopped roasted red bell peppers. ( Be sure to drain both.) It's a great day before shopping recipe as most ingredients are canned, bottled or frozen. Be prepared...this makes enough to take to a potluck. It makes approx. 18 cups.

1 red onion, small, finely chopped

At this point, I just add the dressing ingredients and stir well. Add the crumbled feta cheese and stir again. Serve. Note: when making to take to a potluck don't stir in the feta cheese until just before serving.

DELICIOUS NACHOS SUPREME

Delicious Nachos Supreme image

Perfect party food! --- this is one of my all time favorite nacho recipes that I have made many times in the past, and I guarantee you will love this! --- all amounts may be adjusted to taste and double the recipe if desired but keep the garlic no more than 2 tablespoons, if you really want to go all out add in a can of drained black beans to the ground beef mixture! 1/2 pound Italian sausages with casings removed can be mixed with the ground beef if desired, to turn up the heat use a package of taco seasoning mix or spicy salsa and add in cayenne or dried chili flakes --- for the best flavor make certain to brown the meat well :)

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready. This will help you stay organized and avoid scrambling later on.
  • Use a variety of beans: This will give your soup a more complex flavor and texture. You can use any type of beans you like, but some good options include black beans, kidney beans, pinto beans, and navy beans.
  • Don't overcook the beans: Beans can become mushy if they are overcooked. Cook them until they are just tender, about 1 hour for dried beans or 30 minutes for canned beans.
  • Add vegetables and spices to taste: You can add any vegetables or spices you like to your soup. Some good options include carrots, celery, onions, garlic, cumin, chili powder, and paprika.
  • Let the soup simmer: Simmering the soup for at least 30 minutes will allow the flavors to meld together and develop.

Conclusion:

Four bean soup is a hearty, flavorful soup that is perfect for a cold winter day. It is also a great way to use up leftover beans. With a few simple ingredients and a little bit of time, you can easily make a delicious pot of four bean soup that your whole family will enjoy.
