A Shanghai specialty! "You will not find this dish on restaurant menus because it is too time-consuming. However, it is as common to Chinese families as roast beef is to Western families. It is delicious with steamed buns and any vegetable dish." From Madame Wong's Long-Life Chinese Cookbook.

PORK AU POIVRE

Time 25m

Yield 4 servings (1 serving is 4 ounces)

Number Of Ingredients 7

1 1/4 pounds pork tenderloin
1 teaspoon Dijon mustard
1 tablespoon black peppercorns, coarsely ground or crushed
2 teaspoons olive oil
1/2 cup low-sodium chicken broth
1/2 cup dry red wine
Salt

Steps:

  • Slice tenderloin lengthwise, being careful not to cut through to other side. Split meat into 1 large, flat piece. Spread mustard over both sides of the meat and rub in the pepper, pressing gently so it adheres well. Cut meat crosswise into 4 even portions.
  • In large skillet, heat oil over medium flame. Put tenderloin in the pan and cook for about 10 minutes or until an instant-read thermometer registers 155 degrees F, turning once. Transfer meat to a plate and tent with foil to keep it warm. Add chicken broth and wine to pan and cook over medium-high heat, scraping up any bits that have stuck to the pan. Continue to cook for 8 to 10 minutes or until sauce is reduced to about a half cup. Pour sauce over meat, season with salt, and serve.

Tips:

  • Choose the right pork: For the best results, use pork shoulder or pork loin. These cuts are flavorful and tender, and they hold up well to the cooking process.
  • Marinate the pork: Marinating the pork in a flavorful mixture of soy sauce, rice wine, and spices helps to tenderize the meat and add flavor.
  • Use a variety of vegetables: Four Happiness Pork is a great way to use up leftover vegetables. Feel free to add any vegetables you like, such as carrots, celery, broccoli, or bell peppers.
  • Cook the pork until it is tender: The pork should be cooked until it is tender and juicy. This usually takes about 30 minutes over medium heat.
  • Serve with rice: Four Happiness Pork is traditionally served with rice. However, you can also serve it with noodles or other side dishes.

Conclusion:

Four Happiness Pork is a delicious and easy-to-make dish that is perfect for a weeknight meal. This dish is sure to please everyone at the table. So next time you're looking for a new pork recipe, give Four Happiness Pork a try. You won't be disappointed!
