GARLIC BUTTER NEW POTATOES

Garlic Butter New Potatoes image

I love this recipe. It is so simple, and yet, so delicious. I serve these potatoes with my Tarragon Cream Chicken. However, they are a delicious accompaniment to any meal. I took this recipe from Southern Living. It can be found in their Ultimate Quick and Easy cookbook. I generally do make a couple of changes- I add 1/4-1/2 tsp. salt to the garlic butter. I also often add minced fresh dill when I have it. Enjoy!

Time 18m

Yield 4-6 serving(s)

Number Of Ingredients 7

18 new potatoes, quartered (about 2 3/4 lbs.)
1/4-1/3 cup butter
2 -4 garlic cloves, minced (more or less to taste)
1 tablespoon chopped fresh parsley
1/4 teaspoon pepper
1/4-1/2 teaspoon salt (not in original recipe) (optional)
1/2-1 tablespoon chopped fresh dill (not in original recipe) (optional)

Steps:

  • Add potato to salted water in a large saucepan. Cook, covered, 10 minutes or until tender. Drain. (Do NOT overcook the potatoes- they will be mushy!).
  • Meanwhile, melt the butter in a small skillet over medium-high heat.
  • Add garlic and salt (optional). Cook, stirring constantly, for 3 minutes or until garlic is tender.
  • Add parsley, pepper, and dill (optional). Pour over potatoes, tossing gently to coat.

FRENCH-STYLE BROWN BUTTER NEW POTATOES

Number Of Ingredients 4

1 stick butter
1 pound small new potatoes
1 teaspoon rosemary and thyme
2 cloves garlic, minced

Steps:

  • In a medium (3-quart) saucepan or saucier, melt butter over medium heat. Add potatoes, a healthy pinch of salt, and pepper to taste. Cook, swirling saucepan and stirring frequently with a heat-resistant spatula while butter hisses and pops. Make sure potatoes remain in a single, even layer in the saucepan while cooking. Continue cooking and stirring until butter begins to foam rapidly and turns golden yellow, 5 to 8 minutes.
  • Reduce heat to medium-low; add herbs and garlic (if using). Continue stirring and turning potatoes occasionally to promote even browning. At this point, the butter should be golden brown. Regulate heat so butter simmers at a very gentle bubble and foams up when you stir it. (Depending on the strength of your burner, you may need to reduce heat from medium-low to low.) Continue cooking until potatoes are completely tender (poke a potato with a sharp paring knife or cake tester to test for doneness) and deep golden brown, about 45 minutes. Remove from heat and let potatoes rest for 5 minutes in the saucepan.
  • Toss potatoes to coat them in brown butter. Use a slotted spoon to transfer to a serving bowl; reserve brown butter. Drizzle as much brown butter as you like over the potatoes and sprinkle with chives (if you like) and sea salt to taste. Serve immediately with crème fraîche for dipping.

Roast your new season baby potatoes with golden butter until crisp. Flavour with bay leaves and serve as an accompaniment

Provided by James Martin

Time 1h

Number Of Ingredients 3

2kg new potato , halved
4 bay leaves
140g butter

Steps:

  • Heat oven to 200C/180C fan/gas 6. Bring a large pan of salted water to the boil, add potatoes and bay leaves, bring back to the boil and simmer for 10-12 mins until just tender.
  • Drain the potatoes and leave to steam in a colander. Return the pan to the heat, add butter and melt gently until it turns a nutty brown colour. Remove from the heat, stir through the potatoes (don't worry if a few break up) and bay leaves, and leave to absorb for a few mins.
  • Meanwhile, heat a roasting tin in the oven, tip the potatoes in and season well. Roast for 30-35 mins until golden and crisp, turning and basting halfway through. Transfer to a dish and pour over any buttery juices from the tin.

BUTTER BROWN POTATOES

My stepmom's recipe for delicious potatoes that are crunchy/chewy on the outside and soft and fluffy in the middle.

Provided by SuperSpike

Categories     Potato

Time 55m

Yield 4 serving(s)

Number Of Ingredients 4

3 tablespoons butter or 3 tablespoons margarine
4 -6 russet potatoes
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Peel potatoes and cut in half lengthwise (you only need enough that will fit in the bottom of your baking dish- so start with four and see if you need to peel more to fill the dish).
  • Place butter/margarine in a 9x13 baking dish and place in a preheated 350 F degree oven, and let it melt. Remove from oven and add potatoes in coating thoroughly (you may have to use a basting brush for this). Arrange potatoes cut side down, and season with the salt and pepper.
  • Return dish to oven and bake for 45 minutes to an hour (depending on thickness of potatoes), or until the potatoes are golden brown and cooked through. For best results baste the potatoes with the melted butter in the bottom of the dish halfway through the cooking time.
  • Note: this is a really easy side dish if you are cooking other items in the oven and can easily be made when you have to bake something between 325 and 375- just adjust the cooking time.

Tips:

  • Select the Right Potatoes: Choose small, waxy potatoes like baby potatoes or fingerling potatoes. They hold their shape well and have a creamy texture when cooked.
  • Wash and Dry the Potatoes: Before cooking, thoroughly wash the potatoes to remove any dirt or debris. Pat them dry with a clean kitchen towel to prevent splattering while frying.
  • Use Clarified Butter: Clarified butter is made by removing the milk solids from regular butter, resulting in a purer butterfat. It has a higher smoke point and won't burn as easily as regular butter.
  • Cook the Potatoes in Batches: Don't overcrowd the pan when cooking the potatoes. Cook them in batches to ensure even cooking and prevent them from sticking together.
  • Shake the Pan: Gently shake the pan while cooking the potatoes to prevent them from sticking to the bottom. This also helps them brown evenly.
  • Use a Splash of Water: If the potatoes start to stick to the pan, add a splash of water. This will help release them and prevent burning.
  • Season Generously: Once the potatoes are cooked, season them generously with salt, pepper, and fresh herbs like thyme or rosemary. You can also add a squeeze of lemon juice for a bright flavor.

Conclusion:

French-style brown butter new potatoes are an easy and delicious side dish that can elevate any meal. With their crispy, golden-brown exterior and tender, flavorful interior, these potatoes are sure to impress. Follow these tips and you'll be able to make perfect brown butter new potatoes every time.
