I love ... I mean REALLY love this breakfast. It is decadent. It looks very special but so easy to put together. It is a great for guests or for any occasion. It is versatile too. Use a different kind of bread, or any fruit or jam that you like. Either way it is very impressive looking and tastes every bit as good as it looks. Mascarpone is very rich yet surprisingly very low in fat. I like to serve this with turkey sausage for a out of this world breakfast.

8 slices French baguettes, 1-inch thick
3 eggs
3/4 cup half-and-half cream
1 tablespoon honey
1 teaspoon pure vanilla extract
1 tablespoon butter
8 ounces mascarpone cheese
1 tablespoon maple syrup
1 cup frozen mixed berries
1/2 cup raspberry jam

Steps:

  • To Make the French Toast:.
  • Place cookie sheet in the oven and preheat to 275. Whisk the eggs, cream, vanilla and warmed honey together until well blended.
  • Melt the butter in a large saute pan. Add the baguette slices to the egg mixture and soak for 3 minutes on each side. cook slices in butter until brown and place on cookie sheet in the oven to keep warm.
  • To Make the Berry Mixture:.
  • In a small saucepan add the Jam until melted. Next add the fruit until heated through.
  • To Make the Maple Mascarpone:.
  • Stir Mascarpone until softened. Add maple Syrup until well blended.
  • To Assemble:.
  • Place 2 slices of french toast on plate, drizzle with berry mixture and top with the Maple Mascarpone.

6 slices brioche bread, sliced 1-inch thick
1 cup mascarpone cheese
6 slices bacon, cooked crisp
2 cups heavy cream
2 eggs
1 tablespoon minced fresh rosemary
Pinch salt
3 tablespoons unsalted butter, divided
2 tablespoons diced chorizo
12 little neck clams, cleaned
1 cup chicken stock

Steps:

  • Cut each slice of brioche bread in half diagonally. Make a deep slit into the bread from the cut side.
  • In a food processor, blend together the mascarpone cheese and bacon. Using a spatula, take the bacon cheese mixture and spread it into the slit in the bread.
  • Whisk together the cream, eggs, rosemary, and salt.
  • Place each piece of bread into the egg mixture and soak for a few seconds. Place the egg-coated bread on a cooling rack set over a baking sheet to drain a little bit.
  • In a large saute pan, heat 2 tablespoons butter over medium heat. Add the soaked brioche slices and cook until golden brown on both sides, about 3 minutes per side.
  • In another saute pan, melt 1 tablespoon butter over medium heat. Add the chorizo. Saute until crisp, then add the clams. Cook for 2 minutes then carefully pour in the chicken stock. 1 1/2 pound apples, peeled, cored and sliced into 1/21/2-inch slices
2 tablespoons sugar
3 tablespoons butter
2 cups mascarpone
1 tablespoon grated lemon zest
3 tablespoons powdered sugar for dusting
Maple syrup
5 egg yolks
3 cups heavy cream
2 teaspoon Calvados
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground clove

Steps:

  • Whisk together yolks with cream, add remaining ingredients. Set aside. Saute apple slices in 3 tablespoons butter until just tender, about 3 to 4 minutes, sprinkle with sugar and grated lemon zest. Cut Brioche into 2-inch slices. Cut each slice sideways 2/3 of the way through to create a pocket. Spread mascarpone mixture on top and bottom of pocket. Put 1/6 of the apples in pocket and press to close. Submerge each slice stuffed brioche in the custard. Saute in butter in a medium skillet over medium-high heat until browned on both sides. Place in 400-degree oven for 3 minutes. Serve with powdered sugar and maple syrup.

¼ teaspoon vanilla extract

Steps:

  • Beat eggs in a bowl until smooth. Add buttermilk, almond extract, cinnamon, and nutmeg and beat well until batter is smooth. Dip bread into batter until evenly coated.

3 ounces cream cheese, softened
1 cup warm heavy whipping cream (70° to 80°)
