Time 1h25m

Yield 12

Number Of Ingredients 17

2 ½ cups cake flour
1 ½ cups white sugar
2 ½ teaspoons baking powder
½ teaspoon kosher salt
¾ cup frozen pink lemonade from concentrate, thawed
½ cup milk
4 large eggs, at room temperature
2 teaspoons strawberry extract
1 teaspoon lemon extract
2 drops red food coloring, or more as needed
12 tablespoons unsalted butter, at room temperature, cubed
8 large fresh strawberries, stemmed, or more as needed
10 tablespoons unsalted butter, softened
1 pinch kosher salt
⅛ teaspoon strawberry extract, or to taste
1 (16 ounce) package confectioners' sugar
1 (10 ounce) jar lemon curd

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch cake pans.
  • Place cake flour, sugar, baking powder, and 1/2 teaspoon kosher salt into the bowl of an electric mixer and stir to combine.
  • Stir lemonade concentrate, milk, eggs, 2 teaspoons strawberry extract, lemon extract, and food coloring together in a separate bowl.
  • Add 12 tablespoons cubed butter to the flour mixture, 2 to 3 pieces at a time, and mix on low speed until all butter is added and the mixture resembles coarse meal. Stop the mixer and scrape the sides and bottom of the bowl.
  • Resume mixing at medium speed; add 1/2 of the egg mixture slowly and mix, about 20 seconds. Scrape the sides and bottom of the bowl. • Place 10 tablespoons softened butter and a pinch of kosher salt into the bowl of an electric mixer and beat on medium speed until light and fluffy, about 2 minutes. Mix in 1/8 teaspoon strawberry extract. Gradually add about 1/3 of the confectioners' sugar to the butter while continuing to mix. Add 1/2 of the strawberry puree, scraping the sides and bottom of the bowl, and continue mixing.
  • Add the next 1/3 of the confectioners' sugar, scraping the sides and bottom of the bowl. Mix in remaining strawberry puree. Sprinkle in the remaining confectioners' sugar and mix until desired consistency is reached, adding more confectioners' sugar or strawberry puree as needed.
  • Place the cooled bottom cake layer on a serving plate and spread the top with lemon curd. Place the second layer on top of the first and frost with strawberry buttercream starting with the sides, then the top of the cake.

FRESH LEMONADE SYRUP

Fresh lemonade syrup image

I got this recipe from my mom a few years ago and since then I have found many ways to modify it even though it is excellent just made into classic lemonade. This can be made into classic lemonade, strawberry lemonade, lavender lemonade, arnold palmer or into a lemon granita, with or without something for the adults. I always...

Provided by Amy Croyle

Categories     Other Drinks

Time 1h10m

Number Of Ingredients 13

LEMON SYRUP
3 c sugar
3 c water
3 c fresh lemon juice (12-13 lemons depending on size, this is just an estiate)
2 Tbsp fine lemon zest
EXTRAS YOU MAY WANT TO ADD TO YOUR SYRUP TO MAKE DIFFERENT DRINKS
water- classic lemonade
sparkling water- sparkling lemonade
fresh lavender or lavender essence - lavender lemonade
frozen strawberries, sugared- strawberry lemonade
unsweetened ice tea- arnold palmer
ice- granita
lemon shnapps or any other liquor you like- granita with a kick!

Steps:

  • 1. Juice and zest lemons to get required amounts of both. some times heating the lemon in the microwave for a few seconds will help get the juices flowing.
  • 2. In a heavy bottomed sauce pan boil water and remove from heat, immediately add sugar and lemon zest and stir till the sugar has completely melted and dissolved into the water.
  • 3. Mix in lemon juice and stir until completely incorporated.
  • 4. transfer to a lidded container and refrigerate till cool.
  • 5. once cool mix equal parts lemon syrup with water for classic lemonade.
  • 6. Sparkling lemonade- mix equal parts lemon syrup with sparkling water.
  • 7. Lavender lemonade- add 1/2 cup fresh lavender to water before boiling the water (if you do not want the lavender floating around in the syrup you can tie it in cheese cloth or put a fill your own tea bag) or add lavender essence to classic lemonade.
  • 8. Strawberry lemonade- add 1/8 cup thawed sugared frozen strawberries to classic lemonade. (you can make your own sugared strawberries too just make sure they have alot of time to sit and get the juices flowing for a nice syrup)
  • 9. Arnold palmer- mix lemon syrup with equal parts unsweetened ice tea
  • 10. Granita- in a blender, blend 1 part syrup with 1 1/2-2 parts ice. blend till smooth and slushy. For the adults add one shot of your favorite liquor per serving (more or less to your taste)

Tips:

  • Choose the right lemons: Select fresh, ripe lemons with a bright yellow color and smooth, unblemished skin. Avoid lemons that are green, have blemishes, or are too soft.
  • Wash the lemons thoroughly: Before juicing the lemons, wash them thoroughly under cold running water to remove any dirt or pesticides.
  • Use a citrus juicer: A citrus juicer is the best tool for extracting the maximum amount of juice from lemons. If you don't have a citrus juicer, you can also use a lemon squeezer or a fork.
  • Strain the juice: After juicing the lemons, strain the juice through a fine-mesh strainer to remove any seeds or pulp.
  • Add water and sweetener to taste: The amount of water and sweetener you add to your lemonade will depend on your personal preference. For a classic lemonade, use equal parts lemon juice and water. You can also add sugar, honey, or agave syrup to taste.
  • Chill the lemonade: Before serving, chill the lemonade in the refrigerator for at least 30 minutes. This will make it more refreshing and flavorful.
  • Garnish with lemon slices or mint leaves: When serving, garnish the lemonade with lemon slices or mint leaves for a touch of extra flavor and visual appeal.

Conclusion:

Homemade lemonade is a delicious, refreshing, and healthy drink that is perfect for any occasion.
