Time 10m

Yield 6 serving(s)

Number Of Ingredients 7

2 tablespoons tarragon vinegar or 2 tablespoons wine vinegar
3/4 teaspoon salt
generous dash fresh ground pepper
1 small garlic clove, crushed
8 ounces mushrooms, sliced
16 ounces spinach, torn into bite-size pieces
1/4 cup vegetable oil

Steps:

  • Mix vinegar, salt, pepper and garlic in large salad bowl; toss with mushrooms. Let stand 15 minutes. Toss spinach and oil until leaves glisten. Toss mushroom mixture with spinach.

Tips:

  • Choose the freshest mushrooms possible. Look for mushrooms that are firm and have a slightly damp appearance. Avoid mushrooms that are slimy or have any signs of bruising or discoloration.
  • Clean the mushrooms properly. Use a soft brush or a damp cloth to gently wipe away any dirt or debris from the mushrooms. Do not wash the mushrooms under running water, as this can make them soggy.
  • Slice the mushrooms thinly. This will help them to cook evenly and absorb the flavors of the dressing.
  • Use a variety of greens in your salad. This will add flavor, texture, and color to the dish. Some good options include baby spinach, arugula, romaine lettuce, and kale.
  • Make your own dressing. A simple vinaigrette made with olive oil, vinegar, salt, and pepper is a great option for this salad. You can also add other ingredients to your dressing, such as herbs, spices, or citrus juice.
  • Top the salad with your favorite toppings. Some good options include crumbled bacon, hard-boiled eggs, avocado, or nuts.
