HEALTHY FRESH CRANBERRY ORANGE COCONUT MUFFINS

Healthy Fresh Cranberry Orange Coconut Muffins image

I'm a sucker for all things coconut and now that we have healthier options for incorporating it I like to modify existing recipes. This is a healthier version of a classic Cranberry Orange muffin. I've eaten 2 just now and had to make myself stop. Original version of this I was inspired from is recipe #75662 on this site.

Time 35m

Yield 16 muffins, 16 serving(s)

Number Of Ingredients 14

1 cup fresh cranberries, chopped
1/4 cup sugar
1/4 cup brown sugar
1/4 cup unsweetened flaked coconut
1 1/2 cups white whole wheat flour
1/4 cup coconut flour
1/4 cup oat bran
3 teaspoons baking powder
1/2 teaspoon kosher salt
1/3 cup coconut butter, melted
3/4 cup orange juice
2 large eggs
1/2 cup pepitas (raw hulled pumpkin seeds)
turbinado sugar, for sprinkling on top before baking

Steps:

  • NOTE: If not using coconut flour then you can probably use ½ cup of OJ. Coconut flour requires more liquid.
  • Preheat oven to 400 degrees F.
  • Line muffin tins with paper cups. - I love the new parchment ones they have in grocery stores now.
  • In a bowl, stir together cranberries & regular sugar.
  • In a large bowl sift together flours, oat bran, coconut flakes, baking powder, salt and brown sugar.
  • Whisk eggs, OJ, and melted butter and then add to dry ingredients all at once and stir until moistened.
  • Fold in sugared cranberries.
  • Scoop into prepared muffins liners evenly .
  • Sprinkle desired amount of Turbinado sugar on top of each.
  • Bake at 400F for 20 minutes or until lightly brown and toothpick comes out cleanly.

Time 35m

Number Of Ingredients 12

1 3/4 c all purpose flour
1/2 c sugar
1/3 c brown sugar, firmly packed
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1/4 tsp ground ginger
2 medium oranges
1/4 c orange juice
1 large egg, beaten
1/2 c butter, melted

Steps:

  • 1. Preheat oven to 400 degrees F. Spray a muffin tin (either a 12 hole regular size or a 6 hole large size) with non-stick cooking spray.
  • 2. In a large bowl, whisk together flour, sugars, baking powder, baking soda, cinnamon, salt and ginger until well blended.
  • 3. Zest both oranges into flour mixture and mix well.
  • 4. After zesting, peel oranges (and seed, if necessary) and place in a blender with the orange juice. Blend oranges and juice on high for 30 seconds, or until oranges are pureed. Add egg and butter and blend on high again for 10 seconds.
  • 5. Add orange mixture to flour mixture and stir until dry ingredients are just moistened.
  • 6. Fill muffin cups 1/2 full. Bake for 18 - 22 minutes for regular muffins, 21 -26 minutes for large muffins, or until a toothpick inserted comes out clean.
  • 7. Let cool for 5 minutes and remove from tin to a rack. If desired, drizzle with orange glaze. Combine 1 cup powdered sugar with enough orange juice to create a glaze that will drizzle over the muffins.

Tips:

  • Use fresh oranges for the best flavor. If you don't have fresh oranges, you can use bottled orange juice, but the muffins will not be as flavorful.
  • Grate the orange zest before squeezing the juice. This will help to release the orange's essential oils and give the muffins a more intense orange flavor.
  • Do not overmix the batter. Overmixing will make the muffins tough.
  • Fill the muffin cups only 2/3 full. This will allow the muffins to rise properly.
  • Bake the muffins at a moderate temperature (350 degrees Fahrenheit) for about 20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

These fresh orange muffins are a delicious and easy-to-make breakfast treat. They are perfect for a quick and easy breakfast on the go, or for a special occasion brunch. With their bright citrus flavor and moist texture, these muffins are sure to be a hit with everyone who tries them.
