Steps:

  • Peel peaches, remove pits and slice. Add to a large sauce pan with 2 cups of water and 1/2 cup of sugar. Bring to a boil over medium-high heat.
  • Boil for about 5-6 minutes. Mash peaches with a potato masher for about a minute. While the peaches are cooking, juice the lemons.
  • Place a sieve over a bowl and pour peach mixture into the sieve a little at a time, allowing the juices to drain into the bowl. Use a large spoon to help mash the juices through. Once you have gotten all the juice through, discard the remaining peach pulp.
  • In a large pitcher, stir together peach syrup, lemon juice, the remaining 1/2 cup of sugar (plus more, to taste), water, and ice. Serve with lemon slices, peach slices, and mint leaves for garnish.

8 cups (2 litre) water (divided)
3 cups granulated sugar
7 peaches
1 cup (250ml) lemon juice (freshly squeezed)

Steps:

  • Mix together the sugar and 3 cups of water in a saucepan and add in the whole peaches.
  • Place the saucepan over a medium flame and stir occasionally until the sugar has dissolved.
  • Bring to the boil and boil for 2 minutes.
  • Switch of the heat and allow the syrup cool with the peaches in it.
