1 cup buttermilk
2 cups Italian seasoned breadcrumbs
1 (24 count) box store-bought cheese ravioli (about 24 ravioli)
1/4 cup freshly grated parmesan cheese
store bought marinara sauce, heated, for dipping

Steps:

  • Pour enough olive oil into a large frying pan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 325 degrees F.
  • While the oil is heating, put the buttermilk and the bread crumbs in separate shallow bowls.
  • Working in batches, dip ravioli in buttermilk to coat completely. Allow the excess buttermilk to drip back into the bowl.
  • Dredge ravioli in the bread crumbs. Place the ravioli on a baking sheet, and continue with the remaining ravioli.

1 pint strawberries, stemmed and cut in half, plus 12 strawberries, stemmed and cut lengthwise into quarters
1/4 cup sugar
1 teaspoon black peppercorns
1/2 bay leaf
1/2 cinnamon stick
1 teaspoon grated lemon rind
1 teaspoon grated orange rind
2 tablespoons fresh lemon juice
3 tablespoons fresh orange juice
1/2 pound rhubarb, trimmed and cut into 1/2-inch thick slices
1 cup sugar
1 tablespoon water
6 tablespoons fresh orange juice
1 tablespoon grated orange rind
1 1/2 teaspoons grated lemon rind
2 tablespoons ricotta cheese
16 wonton skins
1 egg beaten with 1 teaspoon water
Vegetable oil for deep-fat frying
1 1/2 teaspoons cinnamon
1 1/2 cups vanilla ice cream

Steps:

  • Place all the sauce ingredients except the 12 strawberries in a medium saucepan and bring to a boil. Reduce the heat and simmer for 10 minutes. Remove from the heat and let cool. Take out the bay leaf and cinnamon stick. Puree in a food processor and strain through a fine sieve. Set aside.
  • Place the rhubarb, 1/2 cup of the sugar, water and orange juice in a medium saucepan. Bring to a boil and cook just until the rhubarb is soft, about 5 minutes.   • Heat the oil in a deep-fryer or large pot until it reaches 375 degrees. Carefully drop the ravioli in the oil and fry until golden on both sides. Drain on paper towels. So I actually made this pie last week, before our weekend berry picking adventure. And I'm tempted to make it again with the berries that I froze "fresh from the farm." For this, I cheated and used 2 pre-made pie crusts that I've had in the freezer since the holidays. And I say cheated, because I much prefer to use my own...but in a moment of weakness, busy-ness over the holidays, I grabbed a few packages and didn't end up using them. So now I figured, I better not let them go to waste and just use them up. And enjoy the convenience! (Note: If you freeze the store bought crusts, just set them out on the counter a few hours before you need to use them and let them come up to room temperature before unrolling.) I even made a pretty lattice top. It all baked down to ooey-gooey sweet-tart perfection! Don't worry if your pie seems kinda "tall" when you put it in the oven...it will shrink down as it bakes! And also, I recommend baking this with the pie plate on a foil lined cookie sheet. It can make for a bubbly mess in the bottom of your oven if you don't!

2 extra-large eggs, beaten
3 tablespoons salted butter
1/3 cup finely chopped onion
1/4 cup finely chopped green bell pepper
1 medium clove garlic, minced
2 tablespoons finely chopped celery, optional
2 tablespoons tomato sauce (I used Hunt's)
2 tablespoons all-purpose flour
Salt, black pepper, creole seasoning, to taste
1 cup half-and-half cream
Vegetable oil for frying

Steps:

  • Prep crawfish and vegetables. Line a wire cooling rack with a couple layers of paper towels then place rack on a cooking sheet. Set aside. Heat about 2 inches vegetable oil in a medium pot to 350°. Combine Parmesan cheese and breadcrumbs in a shallow bowl. In another bowl, whisk the eggs. Dip raviolis in egg wash and then coat in bread crumb mixture. Place coated raviolis on a large platter until ready to fry. Preheat oven to 150° F.
