3/4 cup molasses
1/2 cup light brown sugar
Pinch cayenne pepper
1 cup bourbon
Salt and freshly ground black pepper
8 large sweet potatoes, par cooked and cut into 2-inch dice
3/4 cup toasted chopped pecans

Steps:

  • Preheat the oven to 375 degrees F.
  • Combine the butter, molasses, brown sugar and cayenne in a medium saucepan and cook over medium heat until smooth, about 5 minutes. Increase the heat to high, add the bourbon and cook for 2 minutes to allow alcohol to burn out. Season with salt and pepper.

2 large sweet potatoes (about 2 pounds), skin on, scrubbed and cut into 4-inch sticks, each 1/2-inch thick
4 cups (1 quart) canola oil
3/4 cup plus 2 tablespoons cornstarch
1/2 cup lager beer
Easy Mediterranean Spice

Steps:

  • Preheat oven to 200 degrees. Put a wire rack on a rimmed baking sheet and place in the oven.
  • Put sweet potatoes in a microwave-safe container, cover, and microwave 2 minutes. Stir gently, cover, and microwave 1 to 2 minutes more until pieces are pliable. Let rest 5 minutes covered; pour onto a platter.
  • In a 4-quart saucepan over medium, heat oil to 375 degrees on a deep-fry thermometer. In a large bowl, gradually whisk the cornstarch into the beer (if you whisk it together all at once, it will get too thick). Working with a handful at a time, dip potatoes into the mixture, letting the excess drip back into the bowl. Add to the hot oil and fry in three or four batches until dark golden brown, 4 to 5 minutes per batch. Transfer fries to oven while cooking the remaining batches.

2 cups self rising flour

Steps:

  • Cut the sweet potatoes into small cubes, let set in cold water for 10 minutes.

Most of my experiments aren't worth saving, but I actually want to remember what I did this time so am posting the recipe for the brown sugar caramelized sweet potatoes that I made. This recipe is perfect for cooking for 1-2, and only takes a few minutes. I used some very skinny home grown sweet potatoes I picked up at a Farmer's Market and recommend you use potatoes that will slice into small discs rather than huge ones.

1 tablespoon butter
2 small sweet potatoes (do not peel)
1/8 teaspoon salt
2 tablespoons brown sugar
1 teaspoon cinnamon (optional)

Steps:

  • Slice the sweet potatoes thinly, approximately 1/4-1/2 inch thick.
  • Melt butter in a large hot frying pan over medium-high heat, then places slices in the pan in a single layer. Sprinkle with salt.
  • Fry the potatoes until lightly browned on one side, then flip over each slice. You'll need to watch them carefully and move the slices in the hottest part of the pan to the edges so that they all get browned. Adjust the heat down to medium if needed to keep them from browning too quickly. Total browning time took me about 5-7 minutes.
