Time 30m

Yield 4 servings

Number Of Ingredients 12

Kosher salt
8 ounces bow-tie pasta
About 6 cups vegetable oil, for frying
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried oregano
1 teaspoon garlic powder
1/2 teaspoon red pepper flakes
1/2 teaspoon freshly ground black pepper
1/4 cup finely grated fresh Parmesan
One 24-ounce jar marinara, heated, for serving

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook about a minute less than the recommended cooking time. Drain the pasta and spread it in a single layer on a baking sheet lined with parchment. Let cool and pat completely dry with paper towels.
  • Pour about 2 inches of oil into a large Dutch oven and heat over medium heat until a deep-fry thermometer reaches 375 degrees F.
  • Fry the pasta in 3 batches (about a cup each batch) until golden brown and crispy, 2 to 3 minutes.
  • Meanwhile, to a mini processor or spice grinder, add the basil, thyme, rosemary, oregano, garlic powder, red pepper flakes, black pepper and 1/2 teaspoon salt. Process until finely ground.
  • Remove the fried pasta from the oil, drain on paper towels, then sprinkle immediately with some of the seasoning mix. Repeat, working in batches, with the rest of the pasta and seasoning mix.
  • Put the fried pasta on a serving platter and sprinkle with the Parmesan. Serve alongside the warm marinara for dipping.

Time 20m

Yield 6 servings

Number Of Ingredients 12

1 tablespoon extra-virgin olive oil, 1 turn of the pan
1/2 pound hot Italian sausage, available in bulk at butcher counter or, 2 links, casings removed
1 pound sweet Italian sausage, available in bulk at butcher counter or, 4 links, casings removed
3 to 4 cloves garlic, chopped, optional
1/2 cup chicken or vegetable broth
1 (28-ounce) can crushed tomatoes
1/2 cup heavy cream
Salt and freshly ground black pepper
1 cup frozen green peas
24 leaves fresh basil, torn or thinly sliced
1 pound penne rigate pasta, cooked to al dente
Grated Italian cheese, for passing

Steps:

  • Heat a large, deep skillet over medium high heat. Add extra-virgin olive oil, 1 turn of the pan. Add sausage meat. Crumble sausage meat as it browns. Add chopped garlic to the pan. When all of the crumbles have browned evenly, deglaze the pan drippings using chicken or vegetable broth. Stir in crushed tomatoes and bring the sauce up to a bubble, then reduce the heat to a simmer. Stir cream into your sauce, this will blush the color and cut the acidity of the tomatoes. Season with salt and pepper. Stir peas and basil into your sauce to combine. Toss hot drained penne rigate in pan with the sauce, then transfer pasta to serving bowl.

PEASANT PASTA ( FIT FOR A KING)

Peasant Pasta ( Fit for a King) image

This simple pasta dish is very cheap to make, Just a few ingredients and a good olive oil turn this into a meal to relish. I cook the bones from a chicken carcass to make a stock, chicken stock cubes work well if you don't want to make your own stock. Pasta shells are prefered in this dish as they catch the chick peas and the final result is like having a shell with an oyster inside. Kids seem to go for this version of pasta that I cooked many times while in Italy. Serve topped with Parmesan cheese and drizzled with olive oil.

2 pounds zucchini, cut into 1/4-inch thick rounds
8 large shallots, sliced
7 tablespoons olive oil, divided
12 cloves garlic, halved
½ teaspoon crushed red pepper
salt and ground black pepper to taste
1 (16 ounce) package ziti pasta
1 cup chopped fresh basil, divided
¾ cup grated Parmesan cheese

Tips:

  • Use a deep fryer or large saucepan filled with oil to fry the ziti. This will help prevent the pasta from sticking together.
  • Be sure to fry the ziti in batches so that it doesn't overcrowd the pan. This will also help prevent the pasta from sticking together.
  • Fry the ziti until it is golden brown and crispy. This will take about 2-3 minutes per batch.
  • Drain the fried ziti on paper towels to remove any excess oil.
  • To make the sauce, simply heat up the marinara sauce in a saucepan and add the cooked sausage. Simmer for 10-15 minutes, or until the sausage is heated through.
  • To serve, spoon the sauce over the fried ziti and top with grated Parmesan cheese.

Conclusion:

Fried ziti is a quick and easy weeknight meal that is sure to please the whole family. It is a great way to use up leftover pasta and sauce, and it can also be made ahead of time. Simply fry the ziti and sauce separately, and then reheat and serve when you are ready to eat. This dish is also a great option for parties and potlucks.
