I have loved this ever since I was a little girl. It takes a while to make but it's really easy and totally worth it. Cooked zucchini is the best!! **However, I must mention that I use garden zucchinis for this recipe that tend to be quite a bit larger than those purchased in a grocery store. If you are using smaller zucchinis, you will need less of the coating mixture.

1 large zucchini (1/4-inch slices)
2 eggs
1/2 cup milk
1 cup flour
salt and pepper, as needed

1 cup flour
1 cup breadcrumbs (I prefer garlic and herb)
1 egg
1/2 cup milk
3 tablespoons oil (I prefer smartbalance omega oil)

Steps:

  • Slice the zucchini into thin slices.
  • Put the flour on one plate and the breadcrumbs on another plate.
  • Mix the milk and egg together in a bowl.
  • Coat zucchini slices with flour on both sides.

3 large zucchini, cut into 1/2-inch rounds
1/2 cup all-purpose flour
1 1/2 cups panko bread crumbs
1/4 cup finely grated Parmesan
2 tablespoons finely chopped fresh parsley leaves
1/2 teaspoon red pepper flakes
Salt and freshly ground black pepper
3 eggs, lightly beaten
1/4 cup water
1 cup sour cream
2 tablespoons buttermilk
1 medium shallot, finely chopped
1 tablespoon chopped chives
1/4 teaspoon cayenne pepper
Dash hot sauce
Kosher salt and freshly ground black pepper

Steps:

  • Preheat oil in a deep-fryer to 350 degrees F.
  • Measure flour into a pie plate. In another pie plate combine panko, Parmesan, parsley, red pepper flakes and salt and pepper, to taste. In a third plate add eggs and water. Dredge the zucchini in the flour, followed by the egg and finally in the panko.
